Sauce

Mince  Beef  and Tomato Sauce


It is my interpretation of Bolognaise Sauce.  It goes well with any pasta that you like,  from spaghetti to gnocchi.  The sauce is rich in fresh tomatoes, tomato from a tin, and tomato paste.

This good Bolognaise sauce,  takes a long time to cook, the same with my minced beef and tomato sauce.  It will take you to cook more than two hours from start to finish.

The best quality beef only to be used and good olive oil, red wine, freshly grated carrots and dry herbs. Add to it some stock to braise the sauce.



The minced beef and tomato sauce is cooked.

Recipe

Mince Beef and Tomato Sauce

Ingredients
500 g the best quality minced beef
1 tablespoon oil to sauté
1 large onion, chopped
1/4 teaspoon white pepper
1 teaspoon dry oregano
some fresh herbs
1large carrot, grated or chopped in food processor
4 medium fresh tomatoes, chopped
1 tin whole tomato, chopped
2 tablespoons rich tomato paste
1/2 cup red wine
1/4 cup olive oil, the best one
Method
Sauté the minced beef in oil until brown, add in the chopped onion
Stir them together, cook for about five minutes
Add in chopped tomatoes, white pepper bring to simmer
Add in the carrots and keep on cooking for a few minutes
Add in the wine, olive oil, continue cooking, stir it from time to time
Add in the stock, stir and  bring to simmer again, lower the heat of the cooking stove
Cover the pot and keep on cooking over the low heat for at least for one hour.


The Process Of Cooking The Sauce

Sauté the mince in oil until brown, add the chopped onion, stir them together
and cook for five to six minutes

Add in the chopped fresh tomatoes, white pepper, stir it to mix,
bring it to simmer

Add in the carrots, stir and mix
 keep on cooking for a few minutes,

Add in the wine, olive oil, continue cooking in a gentle simmer,
stir it from time to time

Add in the stock, stir and bring to simmer again,
lower the heat of the stove, then cover the pot

 Keep on cooking over the low heat for at least for one hour,  covered.
check it now and then to make sure it is not burnt

The minced beef and tomato sauce is cooked.

The sauce keeps well refrigerated, and it can be held in the freezer for two months at least.
