CHEESE . . . .




TIA  MARIA  CHEESECAKE
We like to eat cheese, from savoury such as a cheese platter served with biscuits and fruits to cheesecakes, creamy and delicious.

Ricotta Cheesecake we love, but recently we enjoyed Tia Maria Cheesecake, what an appropriate cheesecake to served with coffee the hot drink in which served daily at our home. 
I always want to bake the cheesecake with coffee liquor, that day was the right time to do it to add extra sweet for  Rayner's birthday celebration.  I followed a recipe, but of course, adjustments had to be done, and it's just the way I liked it.   I was pleased, it worked.


The Making of the Tia Maria Cheese Cake.

The Base of the Cheesecake
Digestive Biscuits and Melted butter.

The base has done: place the biscuit crumb mixture on a tin, pressed down firmly and evenly on the bottom surface of the tin, bake for 10 minutes over medium heat at 160 degrees C.  Cool! Put aside.

The Filing-The Cheese mixture
Beat the cream cheese and sugar until light and fluffy, add in eggs, sour cream and vanilla.  Beat them together to make a smooth and thick mixture.  Add the Tia Maria, blend together, now you have a thick and smooth batter, spoon and put on the prepared baking tin.  Smooth the top and bake in the hot oven at 200 degrees C oven-fan forced for 22 minutes, reduce oven to 150 degrees C, continue baking. For 33mnutes. Switch off the stove, open the oven door slightly ajar, and leave to cool inside the oven for an hour to two hours.
 Do not worry if the baked Cheesecake is slightly Crack.
I will type the original recipe, that way if you want to bake the cheesecake, you will have no problem.


To Decorate.
After the cheesecake rest in the refrigerator for overnight, take it out, even the top and smooth it out.
Mix 145g of sour cream with 2 tablespoons Tea Maria.
Pour the mixture over the cheesecake and spread it evenly, dust with the best cocoa powder.  Keep in the refrigerate until it is set before serving.

 Slice the cheesecake and serve with black coffee or flat white.


I thought of friends who enjoy coffee drinking so much, and they may like the cheesecake with Tia Maria, and I am sure they could prepare it with ease, especially they make their homemade cheese.

Tia Maria Cheesecake

Ingredient
For the biscuit crust
85 hot melted butter, plus extra butter for greasing
14 plain chocolate digestive biscuits, finely crushed

For the cheesecake
3x300g packs full-fat Philadelphia cheese
200g golden caster sugar
4 tbsp plain flour
2 tsp vanilla extract
2 tbsp Tia Maria
3 large eggs
285ml carton sour cream

For the topping
142ml carton soured cream
2 tbsp Tia Mria
cocoa for dusting
8 Ferrero Rocher chocolate, unwrapped.

Method
Heat oven to 180C/fan 160C/gas 4.  Line the base of a 25cm springform tin with baking parchment.  Blend butter and biscuit crumbs.  Press onto the bottom of the tin, bake for 10 mins, then cool.

Increase the oven temperature to 240C/fan 200C/gas 9.  Beat the cheese and sugar with an electric whisk until smooth, then whisk in the flour, vanilla, 2 tbsp Tia Maria, eggs and 285ml soured cream.

Grease sides of the cake tin with butter.  Pour in the mixture and smooth.  Bake for 10 mins, then turn the oven down to 110C/fan 90C/gas 1/4 for 25 mins.  Turn off the oven, then open the door and leave to cool inside the oven for 2 hours.  Don't worry if it cracks a little.

Mix 142ml soured cream and Tia Maria, them smooth on top of the cheesecake. Chill.


I did not follow the recipe faithfully, thanking Good Magazine for the method though, it gave me guidance and ideas.  Indeed we enjoyed the cheesecake with the Tia Maria very much.

ORCHIDS FLOWERS



A lovely Sunday morning here in my town, the sun is out, it is very sunny, and the cold breeze freshen up the garden, what a beautiful day we are having.  Portering around the backyard is pleasant today, and here I visited my Orchid Plants Corner, they are delightfully happy and healthy.  Here they are My Cymbidium Orchids are good and well. It is the time of the year, some of them are flowering, but they are still in buds. There are not many, but I am glad to have them. One of the plants which are in buds is sitting in the house now, it is warm inside and well-protected form the win. I am sure it grows well there.  In a month time, these buds will open to beautiful red flowers.

More orchids are showing new spikes and a large potted Cymbidium which sits under the eve has six long stems with lots of buds.  It is a beautiful pink cymbidium, soft pretty pink.

All together five orchid plants are in flower this year, I am pleased, it's better than not at all.

To look back on my orchids collection at the time they were flowering is my consolation. 

These orchids so beautiful, we enjoyed them when they were in flower; unfortunately, this year they are having a rest, the plants look healthy though, that's encouraging.
To tell you the truth this creamy cymbidium (below) has been flowering a few times in the past but only five stems of orchids flowers, never like before.  Now, it is only a potted orchid plant, carelessly growing to survive.  I am not sure the problems are, it has the best care from the gardener.
The Cattleya Orchid is no here any longer, it has long gone.  It could be dead due to overwatering.










It is good to see, even though only the pictures, below the dated one, is Little Miss Muffet Cascading orchid, the plant is living but only a few leaves, it could well be an adjustment time after the reporting a few years ago.





It has been a lovely day, we take it slowly, all activity and work had been done before.  Thinking of the grandkids the children who are always busy every weekend, sports, catching up with family and friends, attending Church's service and so forth, it is all good. We both are working but in silence until meeting up for morning tea. Sweet Sunday, we are putting all energy back to our system by having mini Pear Perfect Pancake to go with hot coffee.

The fruit bowl is full of fresh fruits, and some of them are dying to be consumed.  Pear Pancake is  Emeideate Ectessy if I may say, today the Pancake we shall have.

Pear Delight


Pear with the deliciousness, We have been eating lots of pears lately, enjoy them fresh, poached, a companion for a cheeseboard and to add the freshness for salads,  as salad is served at the table daily.
Delicious cake, it is topped with mixed dried fruits, added of the fresh pear before baking, makes a Pear Delight Cake.  I have baked this cake a few time, and the family love it.

This time my baking is dedicated for Rayner to mark his milestone birthday.  It was good to be shared with.

Here, The Preparation and The Baking.
It was good to fill up Sunday morning, these days we have to be active and busy to warm up to start the day, no mention that the Autumn season is getting colder and getting darker quickly.  We must be efficient and spend time wisely, otherwise, without knowingly, the day has long gone.

Gathering Ingredients
Fresh Herbs for Garnish
From the pantry and from the refrigerator
Self-rising flour, Butter, Sugar, Eggs, mixed dried fruits, cream
Jam, Almond meal and the Pear.
The Baking Tin
A large Tart Tin 25cm, baking paper, melted butter

The Preparation
Put the Oven up to 175 degrees C

Make the base of the cake, it is close enough as making lining- paste for pies.
600g self-rising flour
300g unsalted butter softened
275 full cream
1 egg
3/4 cup castor sugar.
Mix all ingredients to make a soft dough
Divide into two and line the two prepared tin with the dough
Cover the tin, spread evenly

The Filling/Topping
Spread evenly three tablespoons jam on top of the dough.
Add 6 tablespoons mix dried fruit which is steep in with sherry the day before-spread it evenly.
Sprinkle with 1 tablespoon almond meal over it.  Now keep aside
The Topping
Peel the 3 medium sizes half-ripe pears and slice thinly
Melt 25g of unsalted butter
Place and arrange the sliced pear on top to cover the filling, brush the pear with the melted butter.
Sprinkle the pear with castor sugar lightly before baking
Bake at the preheated oven at 50-55 minutes.
Let it stays on the tin to cool.
Using yummy ingredients, it makes delicious food

You could see the sparkle of the castor sugar on top the buttered sliced pear.

 When it is cool entirely, cover with baking paper and wrap with a clean tea towel.  Store in a clean, dry place (in the cupboard) for overnight.  Cut and slice in the morning prior serving.
 Keeping Clean - Protection of the Dust Etc
You may like to bake the Pear Delight Cake, I hope the writing and the instruction, is clear, and the method of cooking is comfortable for you. Last but not least, the pictures help!


Working in the kitchen has to be meticulously clean for a good reason, that's what I do, and my family has no doubt about it.  How good it is to know, and I am glad that my children continue the routine habit and the tradition to run their home.

Sweets are complemented by Savouries.  Here are the sandwiches using brioche.  Brioches sandwiches are another delight.  My assessment, the egg mixture did not have enough mayonnaise, as the eggs were hardboiled; the mix was to dry, and it was not easy to work with.  Be better next time.

It did not vary, only a savoury and sweet but enough to have for morning tea during the game of sports.  The big birthday does not come every year, so how little it was I made the best of it.  Thanking you all.
