EGGPLANT-TERONG (Javanese)



Creative Cooking

How to cook Javanese eggplant style, there are many dishes and I will share the recipes with you. Eggplant dishes which are famous for everyday meals; Sayur Lodeh, Oseng-Oseng and Sambal/Chutney.


Sayur Lodeh Terong

Ingredients
Fresh Eggplants
Coconut milk
Salt and sugar

Herb and Spices
Chopped shallot and garlic
1 little piece of galangal (a thumb size)
2 salam leaves
Fresh Chilli

Method
Place the coconut milk in a cooking pot, add in the herbs and spices
Cook over medium heat, bring to a gentle simmer
Add in the eggplants, keep on simmering
Continue cooking over a lower temperature for 11 minutes until the eggplant is cooked.

To serve: serve with steamed white rice.

Variation:  Mixed with diced firm tofu, rub the tofu with salt, seal them in hot oil before adding to the eggplant during the simmer.

Quickly braised eggplant is very delicious, served with rice, but you could have it with crusty bread.

Oseng Oseng Terong Pedas
Quick-Braised Eggplants with Chilies


The Recipe:

Oseng- Oseng Terong Pedas

(Quick Braised Eggplant with Chillies)

Ingredients:

2 medium eggplants, quartered
4 small shallots, or 1red onion, sliced
1 clove garlic, sliced
2 chillies red, sliced thinly
½ teaspoon salt
A ¼ cup of vegetable oil
A ¼ cup of water
1green chilli and fresh flat parsley for garnish

Method
Pan-fry the quartered eggplant in a hot pan with the oil
When they are soft add in the onion, garlic and chillies, salt and the water.
Bring to a gentle simmer, lower the heat
Put the lid on to the pan; keep cooking for 20-25 minutes over very low heat

To serve: serve with steamed rice
Put the eggplant into a serving dish, sprinkle with chopped green chillies/flat parsley



Sambal Terong

Baked eggplant, mixed with sauteed onion, garlic and chilli. Crush and mix together using pestle and mortar season with salt.

Another method:  Place chopped eggplant, 2 cloves garlic, 1 large shallot or 1 small brown onion (chopped) and a tablespoon oil,  place all of these on to a baking dish and bake until soft.  Blend together until smooth.

It is sambal, served with rice.

Savoury Pudding with Eggplant
Another idea to cook eggplant.
Using fresh Lebanese eggplants the harvest of my garden.

Savoury Bread Pudding Topped with Eggplant
Lebanese eggplants, slice and panfried in oil
Slices of sourdough bread, crust removed, and buttered
2 large eggs and 300mil of milk to make a mixture
2 tablespoons of Parmesan, and 2 tablespoon Mozzarella cheese
Salt and white paper to taste
Cheese sauce and mix with an egg for topping




Place the buttered bread in a baking dish, scatter the cheese and pour the milk mixture in between (make three layers)  Let is rest, keep aside for one hour or more
Before baking, make the cheese sauce (white sauce and cheese) mix with one egg.
Place the pan-fried eggplant on the top, pour the cheese sauce and spread evenly.
Bake in the oven at 175 degrees C for 40-45 minutes
Serve hot or warm
It is delicious to be eaten cold.

 Slice to serve hot, warm or cold garnished with a leafy green salad.



Mousaka - Based on Greek Cooking

Make the best of the eggplant from a friend garden, thanks July.  This month I have been harvesting my Lebanese eggplants, and I am lucky enough. I got large fresh eggplant from a friend's garden.

Baked eggplant, cooked  lamb mincemeat  and the cheese sauce

Preparation of the Eggplant
 A right size eggplant, slice to round pieces, sprinkle with salt, rested, clean the salt pre-baking.  Bake until soft.
Mince Lamb 
325 g good lean lamb mincemeat, one onion, 1 cup chopped fresh tomato (or 1/2 cup good spiced rich tomato sauce) Fresh herbs-basil and oregano.
Saute the onion and the mincemeat in olive oil until cooked and golden brown
Add tomato sauce, herbs-basil and oregano, cook to braise on low heat for 33 minutes
Salt, pepper to taste


White Sauce-Cheese Sauce
Rapid cooking, a method using oil instead of butter.
 Warm 300mil of milk with 2 tablespoons olive oil, and herbs.
Parmesan/Taste Cheddar Cheese-65 g. You could put a lot more if you wish.
Add in a tablespoon flour, stir to mix together, keep on stirring during the cooking until the mixture becomes smooth and bubbly.  Take it off the heat, add the cheese, stir and mix.


 Mix in the cheese, stir it until combined, the sauce becomes thicker, add one egg prior adding to the Mousaka.
Baking the Mousaka
Put a layer of cooked round sliced eggplant on the bottom of a baking dish, put the cooked minced over, spread evenly, and now put another layer the rest of eggplant over the meat, and cover with the cheese sauce mixed with 1egg, spread evenly,  Bake in the preheated oven at 175 degrees C for 40 minutes




Serving the Mousaka
Rest the Mousaka for 25 minutes after the baked, slice transfer to a plate and garnished with a salad.
My mistake was I did not allow the mousaka rest long enough, it fell apart when it was cut, but taste delicious.

Before The Storm.



This Saturday and Sunday are not going to be good weather, as predicted by the weatherman.  It is going to be cold, wet and stormy.

Anyway, the job has to be done in the garden, a little reluctant really after a busy Friday, but with determination, the tasks were completed in no time, that was good to be working before the stormy weather.  It looks an overcast right now, gloomy, the rain will come soon which is very useful for the soil, I am looking forward to a relaxed afternoon, we missed our morning tea, but we have an early lunch instead.  Always using up all the food in the fridge before the next shopping day is the best way.


A Quick lunch was prepared, the Fresh and Feferlous Food, and  Followed by Hot Drinks.

Afternoon tea was sweet, just realised that today in 2008 was the date to join the sports table tennis club in our town, the KeenAgers Club. It has been a long time to be in the club, and I never forget that the club was so generous to me.  Thanks so much for giving me the coaching in the early years. It is good to see that the club has grown bigger since and visitors, newcomers are always welcome. Nice, pleasant experiences and not, I have, but it's expected.  To be in a group with people as the word goes, not everyone likes everyone, but try to get along and to be civilised.  Newcomers come, people stay, and people go, everyone has their own reason why.  It does take a long time to be comfortable within the club, and the regular members do welcome them with kindness.  Recently, a friendly and enthusiastic a newcomer was still finding his way, his place.  I saw him having a conversation with Rayner, both got on very well, that's from my observation. The following week he caught up with me, we talked. Indeed I listened and answered any questions and so forth, and of course, I asked questions as well with respect.  In my culture, if people are talking to you, you should listen and respond, not to ignore. Otherwise, it is rude. I am glad that communication/conversation took place.  Now, he has settled alright, to be within his peers, the smart and talented group.  It is good to see, from now on, let him be as he has found his place.  I do greet people well, be kind/useful to others as my mother taught me, and I hold on to it.  Rayner and I always try to look after each other over here in this club, to reprimand to one another to make sure we do the right things. I Learnt!!!  

Talking to people is easy, especially the initiative of the conversation starts from there.  I have been in the club for long, but a shame that I don't feel it is home. Maybe, in another ten years, I will do.  On that note, I am glad that I still have a future, something to look forward to.

Today is a good time to reminisce and pleasant to talk about the present time, and a positive hope for a better future.


The Storm
It is in the evening and outside is cold,  but there were, and there are no storms, only the rain fell intermittently.  I wish to have more water, the garden needs it badly.  Two new hanging baskets in the garden, I am growing spinach on them. (Pictures of those next time)

Before The Storm!!! I worked hard and rush as I believe the storm will come too soon, but it was OK, NO STORM at all, nothing to be worried about.
It has been gloomy weather, it's a productive day for me.😌

FAITHFUL



Do I use the right word? 'faithful' to describe. The plant has always been faithful to the gardener. It is still there and keeps on flowering?  Anyway, how good it is, the red Mandevilla Sanderi has been flowering since early this year, the hot summer month it's flowering perfectly it looked so beautiful.
Now is Autumn and the garden is alive dressed in Rubis Red, the beautiful flower.
It has been so loyal, keeps on flowering and the size of the flowers are so prominent, and the colour is a deeper red, It is absolutely gorgeous.


There are not a lot of flowering plants in bloom in my garden, but this Gallipoli Heath is here and faithfully coming to flower every year, very consistent.  It sits a long stretch under the standard roses, and indeed it looks so festive with the purple colour.

The Big Red Geranium was having a rest for a bit, but now come back and stay in flower, very dedicated to the owner, the gardener.  It is just there showing off the vibrant prominent red colour.  When flowers are dying out, the new buds are coming up to replace, so committed.


In spite of the dry weather, the standard red rose is giving us flowers too,  cut a stem the other morning, the bold red colour stands out on the basket.

They're not many colours in the garden at the moment but plenty to be glad about.  The Pink Myrtle is still in flower with struggle of the heat, pink, white, and red roses are there just a view only they look a little tired.

How about your garden this Autumn, is it beautiful? As the saying goes, Autumn is the best time as the leaves are as colourful as the flowers.

Autumn is a beautiful season, it reminds me of lots of things in life.

The healthy flowering plants have their own way to give us joy, and they flower continually.



This Fernery Corner is a home for diseased plants, the maidenhair fern was sick, and now it is there with friends, I am sure it survives.

The citrus plants are doing well this time, but Pomelo is giving us a dozen of fruits, it has been so faithful and consistent for the past few years. 


The gardener expects too much of the garden, which is not fair but at the same time, she appreciates all the faithful plants which make the garden stay alive, with the help of the rain and the Sun.  What could we do without them?

Yesterday, after a busy morning, I worked for the front garden, so far I have been watering faithfully and the other day fertiliser was applied, they need extra nutrient to grow.  For comfort and cosiness, I gave a good feed, put an excellent mulch to the flower bed and a good bath for the plants.  Took me close to two hours to do, but look at the garden bed now, it is beautifully dressed and looking smart.

I was brave to work with the sugar cane mulch, so dusty and so much of it, you had to hold in your breath as much as you could while you were working, it's not an easy task,  I thought we did a great job, I did anyway.  We had an excellent treat afterwards, 'Berries for the Braves'
