Fried tofu salad is a quick and easy salad to prepare, It is a good salad for Springtime. We have been having a lot of rains for the past few days, but the weather is not that cold, so a salad is welcome.
Do I have to fry the tofu first, the answer is 'no'. You can get the fried tofu in a Chinese Grocery Store. They have an array of tofu collections. Puffed fried tofu, Solid dry tofu, and varieties of tofu, from silk, solid to dry tofu. Buy the firm fried tofu for this salad.

Fried Tofu Salad with Saffron and Orange Dressing |
I have been so fortunate, last week I visited my grandkids, and at the same time, I did shopping at the Chinese Grocery Store. I bought some tofu and other things. I have a respectable pantry now, spices, condiments, sesame oil etc. Today, I am sharing a recipe the Fried Tofu Salad.
The Dressing is Saffron and Orange
The Dressing:
Soak a pinch of saffron in a half cup of hot water
Juice of an orange, a teaspoon of orange zest and a tablespoon lemon juice
A half cup of olive oil, salt to taste
Place all ingredients in a bowl, stir and mix to combine
The Recipe, Preparation and Serving the Salad
A cup of each diced tofu, cucumber and avocado. Some greens and chopped parsley
Poach the diced tofu with a cup of water, cook for 2 minutes.
Put in a large bowl, add in the diced cucumber, avocados and the greens
Add in six tablespoons of dressing. Toss and mix, transfer onto a serving plate. Serve at once.
A Lovely Tofu Salad, and contain a lot of vegetable protein. It is very healthy. Viva Vegetarian!
