Today's recipe is about a simple curry. Delicious, creamy with a golden colour is Kare Tahu or tofu curry Javanese style. To cook this curry, you need these herbs; turmeric, onion, garlic, kaffir lime leaves, coriander seeds, lemon juice and fresh galangal.
You can add extra ingredients such as potato or boiled egg and vegetables-cabbage/snake beans or green beans. Serve the curry with steamed rice, eat it fresh - on the day that you cook the curry.
It is a quick curry to cook, I would say from the preparation to serve, it needs only thirty minutes.

Recipe
Kare Tahu
Ingredients:
250 g dry firm tofu or firm fried tofu, diced
2 potatoes, peeled and diced
1 cup snake beans or green beans
Herbs and Spices
2 teaspoons dry turmeric
1 small onion and 2 cloves of garlic
2 kaffir lime leaves,
1/4 quarter spoon of coriander seed
1 teaspoon salt
1 tablespoon fresh lemon juice
a slice of galangal
1 teaspoon brown sugar
1 cup of coconut milk or more
2 tablespoon oil
Method
Grind all the herbs and spice with mortar and pestle to make a rough paste
In a pot sauté the coarse paste in oil until fragrant.
Add in the galangal and lemon juice than the tofu
Cook them for a few minutes.
Add in the coconut milk, salt and the sugar bring it to simmer, uncovered the pot
Keep on cooking, let stay simmering for 5 minutes
Add the potato and the beans, keep on cooking over a low for 5 minutes
Cook a few minutes further until the beans and potato are soft and tender
To serve: Transfer the curry to a serving bowl and serve it with steamed rice.
Enjoy the recipe, give it a go, it is a delicious and very healthy vegetarian dish.
It has been a busy day since yesterday Monday, playing sport, gardening, visiting friends and attending an information night at the Table Tennis club.
Today has been a good day, another productive day, I did gardening, reporting some of the orchids. I got at least two dozen large cymbidium orchid plants to look after. It is very hard going to report orchids, I hope next year they will give me a lot of flowers. It is essential not to forget to water them during the hot summer months.

Yes, the kids liked the potatoes and beans (Thomas didn't eat the beans...) but I didn't give any tofu to them. Henry didn't eat any of it. He doesn't seem to like rice dishes much. Lance and I enjoyed everything! I didn't make a paste out of the garlic etc, just chopped it because I didn't have time. Still delicious though. See you Saturday! Mel x
