Lompia - Basah

Fresh  Pancake Rolls


Pancakes with fresh vegetables, tofu or meat filling.  A delicious savoury treat for snacking or a light lunch.  What you do is make large thin pancakes with the filling.  I made the vegetarian filling today; a variety of shredded lettuce, tofu, omelette cut finely, and a sauce for the flavour.  I have not been making this dish for quite some time.

Pancake Rolls With Fresh Vegetables, Tofu and Shredded Omelet

The filling for the non-vegetarian,  can be anything that you like; chicken with spring vegetables, or Chinese cabbage with prawns or beef and green beans and bean sprouts.  Left over roast meat is very handy for this dish. The most important thing is that you ha great pancake mixture.  The recipe which I am going to share today is the perfect pancake mixture.

Making the Pancake Rolls
filling: shredded lettuces, carrots
tofu and omelette cut finely
chives soak in hot water
 to tie up the pancake rolls
placing the filling and the sauce on
a pancake, fold it then roll it up
the pancake roll is knotted up with
the chive

Keep the pancake rolls - lumpia basah on a plate, wrapped in plastic glad wrap, serve this Lumpia Basah on the same day you prepare it. For lunch, serve two per person.

The sauce: 
2 tablespoons sweet soy and 1 tablespoon salt soy
3/4 cup stock or water
1 teaspoon sesame oil
1 tablespoon vegetable oil
Place the ingredients in a saucepan, cook to simmer and stir
Thicken the mixture with 1 tablespoon of plain flour,  dilute with water
Cook it until bubbly, transfer onto a serving bowl

Perfect Pancake
Makes 10


Ingredients:
1 cup heap full plain flour
3 eggs (50 g)
11/2 cups water
2 tablespoons oil
1 teaspoon salt
Place all ingredients in a large bowl, mix and blend them together at once, to make a light, thin batter.




To cook the pancakes
Use a 16-18 cm saucepan
Heat it over medium heat, when it is hot enough draw from the heat
Pour a ladle of the batter onto the pan, swirl it around for the mixture to cover the full surface
Cook for about 2 minutes until the edges look dry, lift out of the pan
Transfer the pancake on to a plate
Repeat the process until all the batter is used up.

It was a delightful Sunday's lunch, the family enjoyed them immensely.
