Outdoor

Cooking for Outdoors

BBQ is the standard way to cook for outdoors.  However, I cook the food in my kitchen, and I serve the meal outside on a sunny day.  Springtime is a time to be spending more in the garden, not only to do gardening but also enjoy the garden itself.   Pick the best weather when it is sunny, and there is no strong wind - calm and dry.  Enjoy the fresh air and meals.

Practical cooking and presentation are essential for outdoor eating, hot or cold food can be served.   Baked chicken pieces with garnishes is a tasty dish, it is served at room temperature, set the table however you fancy.


The recipe

Baked Chicken Pieces with Preserved Lemon

1 Kg chicken legs
1 whole garlic

1 preserved lemon, wash, take out the pulp
a small piece of fresh ginger, crushed
1 tablespoon marmalade
a pinch of salt
a half juice of a fresh lemon

Some cooking oil

Garnishes: Potato and Sweet Potato

Method
Heat the oven to 175 degrees C
Place the chicken in a large bowl
Add in all spices ingredients
Rub them with the chicken
Put the chicken  and the whole garlic on a baking tray
Drizzle with a little oil

Baked it in a preheated hot oven until brown:
  1. Turn it over after forty minutes of baking
  2. Add in the potatoes, cook another half hour.
  3. Turn it over once more and bake for ten minutes further.
  4. Take them out from the oven, transfer to a serving tray.

Baked chicken with Moroccan flavours, garnished with potatoes and a salad.  No gravy!  The chicken is juicy with a touch of sweetness that you can enjoy as it is.

Broken bread rolls can be served and of course, fresh fruits to close the meal.
