Practical cooking and presentation are essential for outdoor eating, hot or cold food can be served. Baked chicken pieces with garnishes is a tasty dish, it is served at room temperature, set the table however you fancy.
1 Kg chicken legs
1 whole garlic
1 preserved lemon, wash, take out the pulp
a small piece of fresh ginger, crushed
1 tablespoon marmalade
a pinch of salt
a half juice of a fresh lemon
Some cooking oil
Garnishes: Potato and Sweet Potato
Method
Heat the oven to 175 degrees C
Place the chicken in a large bowl
Add in all spices ingredients
Rub them with the chicken
Put the chicken and the whole garlic on a baking tray
Drizzle with a little oil
Baked it in a preheated hot oven until brown:
- Turn it over after forty minutes of baking
- Add in the potatoes, cook another half hour.
- Turn it over once more and bake for ten minutes further.
- Take them out from the oven, transfer to a serving tray.
