Beetroot   Soup

I have a few plants of beetroots, and they have been in the pots for a while.  They have green and colour leaves and look healthy, I am not sure that they have the beets yet.  I thought it's a good idea to have potted beetroots.  Just see, if within a month there are no beetroots, then  I won't' be harvesting at all.

I  bought fresh beetroots from the market, they are so clean, I cooked beautiful red beetroot soup, very very delightful.


Recipe
Beetroot Soup Susy's Style

Boiled 2 beetroots until soft, peeled and keep aside
In a pot- cook 1 of diced carrot, and onion in oil until softened
Add in 3 cups vegetable stock, 1 bay leaf and cook the soup for 10 minutes
Then add in 190 g peeled cooked and chopped beetroots and cook for a few minutes, let it cool
Put the beetroot and vegetable soup in a blender, and work it to make a smooth puree
Put it back in a pot, heat it up, bring to a simmer add in 1 tablespoon lemon juice
Add in 1 tablespoon beurre marnié, bring to simmer again until the soup is creamy and thick
(you do not need to put he beurre marniè if the soup is thick enough).
Serve hot in a bowl garnish with herbs and some crème Fraiche and crouton.
You can serve the soup with sandwiches as well if you like.
