Potatoes   To   Potato  Rosti

Potatoes are very versatile vegetables.  They can be prepared into delicious food; boiled potatoes with butter and herbs, it is simple preparation, but it can be very satisfying. Potato bread, potato rosti, potato chips;  mashed potatoes, roast potatoes, croquette potatoes are great garnishes for meat, chicken or fish dishes.




Today I am cooking potato rosti.  I am using the raw grated potato for cooking the rosti, but you can make rosti from grated baked potato as well.
Rosti is the national food of Switzerland, we had passed through the place before, but we did not have potato rosti to taste.    I cooked rosti a few times and the family like it.

Röschti in Switzerland according to the Swiss German [ˈrøːʃti]) is a Swiss dish consisting mainly of potatoes. It was originally a typical breakfast eaten by farmers in the canton of Bern, but today is eaten all over Switzerland and also in many restaurants in the Western World. Many Swiss people consider rösti a national dish. Today, rather than finding it a complete breakfast, it is more commonly served to accompany other dishes such as Cervelas or Fleischkäse (Wikipedia)
Rösti is made with roughly grated potato, either cooked or raw.

Potato Rosti
6 small potatoes, peeled and grated
Add in some salt, pepper and chives
Take a handful, shape into a round ball, put in a hot pan, flat it out and cook in oil for 3 minutes (you can use oil and butter)
Flip it over and cook for another 3 minutes until golden brown.
Take it out, and rest on an absorbent paper, to drain some of the oil
Serve hot to garnish meat dishes.

I grated the potatoes prior the cooking, so the grated potatoes stay fresh and creamy colour.  The rosti was delicious; golden brown, crisps the outside and soft in the middle.
