Perfect Pizza

Cold and wet, the rains have never stopped.  It is suitable for the garden and for us too, saving us from watering the plants.  It comes to dinner time,  we all stay in, we have to think about what we would have for dinner.   Baked food could be the answer.  Pastry or Pizza?

Home baked pizza is perfect for us, we can choose any topping as we wish.  We love our pizza rich in spices and topping.  We also love our pizza very plain with very simple topping,  such as pizza with potato and cheese.   In Italy the pizza has a minimal and light topping, it is very different compared to the pizza in Australia.  But the pizza that we had there was very delicious, the taste was so right.

The dough is a batch of rich bread dough (with egg).  Fresh herbs to garnish.
The topping:
- meat sauce, fresh tomato, anchovies,  chorizo, mozzarella and tasty cheese.
- fresh herbs, chillies, extra virgin olive oil

Cooking for myself always comes from the heart, use everything that I have, add this and that and most of the time it works.  I like a recipe to share.  As I said before, a method is only a guide, everyone can cook without.

Tips for a perfect pizza: - a suitable baking tray, a hot and reliable oven, a good dough for the base, and delicious topping, also not overbaked.




There are a couple of types of pizza trays available. The regular aluminium trays work well, or you can buy baking trays with holes in the base, which allow more heat to penetrate, making the pizza base crispier.

It was a success, the pizza had a crusty base and yet soft and spongy, delicious spicy topping and crusty cheese on the edges.  The baker was happy, and the diners were very delighted.


That was the first pizza for the year, the family doesn't have them often.   Pizza is food in itself, but remember to have a salad afterwards or fresh fruits.
