Baking

Banana Bread with Dates and Apricots

There were some very ripe bananas, in the fruit bowl, they don't look beautiful at all, but I know that the inside is perfect for cooking, even for eating.  They gave me an idea to do something about.  To have a family that keeps going and active, they need something healthy to eat, to get the energy back.  A proper snack is what is required, and banana bread is one of them, so I baked a loaf of delicious, moist banana bread with dates for natural sweetness.   I have the recipe to share.

Sliced the bread and buttered to serve.


A pick you up bread, family favourites, and it is effortless to prepare.  It freezes well and keeps in the airtight container for a few days.

Susy's Banana Bread

Ingredients:
1 1/2 cupful self-raising flour, and 1/4 teaspoon bicarbonate of soda
1/4 cup vegetable oil

2 large ripe bananas, mashed and add 1 tablespoon yoghurt
Dried fruits: 16 dates, 6 apricots, chopped

Method
Heat the oven to 190 degrees C
Line and butter a small loaf tin
Rub the chopped dried fruit with a little of the flour
In a bowl, place the flour, the b-soda, mix,  add in the dried fruits
Put in the mashed banana mixture and the oil together
Mix them  thoroughly, to make a soft dough, pat it with flour
Transfer the sweet bread dough to the prepared loaf tin, mark lines with a knife
Bake in the preheated oven for 22-25 minutes until golden
Leave in the tin for 10 minutes before turning it out
To serve
Sliced and buttered, for snacking, morning or afternoon tea

The Preparation and The Baking


It is very delicious, the dates and the apricot give the new balance for the taste of sweetness, it makes its rights.  The bread keeps moist to keep in an airtight container up to three days. 
You feel so free and happy to give the family a healthy snack home baking.  No preservatives and no extra expenses.  Perfect!.
