Lasagna

Lasagna To  Share.

What does it mean?  I have a large lasagna which I wish to give away.  No, I don't.  It is just to emphasise that the cooking is not for us.  I have to cook the dish according to people that I wish to share with.  If I cook for little people, then I cook it with simplicity.  It is tasty, but it does not have a lot of spices.

Today I am cooking a delicious lasagna for the grand kids.  They never have lasagna at our home when they come for visits.  But they have grown up so have their palates.   Mary Rose, Thomas and Henry love pasta and pastry.  I have to cook this Bolognese sauce for the lasagna, but I am omitting the garlic and mushrooms, I will add just a little bit of chopped bacon for extra flavour, using instant lasagna sheets that I got from the shop. I have some tomatoes from the garden, I will add into it, as well as some tomato puree.

To Cook The Bolognese Sauce
fresh tomatoes, aromatic vegetables: carrots and celery
 for Bolognese sauce
chop the aromatic vegetables finely also
one onion and some lean bacon
Pan fry 500 gr minced beef and 255 g pork mince.
in 1/4 cup hot oil until brown, add in
 the chop aromatic vegetables,  cook until soft
chopped  fresh yellow and red tomato
 about two cups
add the chopped tomatoes into the meat mixture,
cover with the lid on, cook for 33 minutes
over low heat,
cover the pot, stir the sauce from time to time,
add 1/2 cup stock or water to the meat sauce,
cook for 55 minutes,
add red wine, mix it well
cover the pot, continue cooking for one hour over
low heat with the lid on

about two hours cooking process



It does take a long time to cook the sauce, but there is no other way.  Now, wait until the sauce is cooling down, then the assembling of the lasagna can take place.



Assembling Lasagna
the cheese sauce, basic white sauce add some
cheeses, Parmesan and Tasty
drizzle oil on the bottom of the dish,

add some tomato sauce, spread evenly

place three or more the lasagna sheets, put them
Bolognese sauce on top spread evenly
put some cheese sauce, spread to cover the Bolognese
sauce, get the lasagna sheets to place them on top
lasagna sheets include the white sauce neatly. 
Do these process once more
put some tomato sauce over the last lasagna sheets,
then top it up generously with the white cheese sauce
Spread evenly.

(you could sprinkle some more cheese on top)
bake in preheated oven 175 degrees C for 22 minutes
take it out, then cover with aluminium foil
put it back in the oven, continue baking for 25 minutes

A note:  add some more cheeses on top the white sauce then bake it in the oven.  I omit them because the grandkids may not like it if it's too cheesy.


I have not been cooking lasagna for a long, long time.  The instant lasagna sheets were easy to work with, a little brittle.  When it is cooked, looked so good, hope it will slice well.   Happy eating to you all kids.
