Caribbean Cake

Caribbean Banana Cake

My interpretation of sweet cake that may be found in the Caribbean Islands is a cake that contains fruits and rum.  My Caribbean banana cake is a moist cake and rich in dried fruits: pineapple, apricot, date, sultana which are added with dark rum.  No sugar is added because I think it is sweet enough with all the dried fruits.  Top with fruity icing or dust it with icing sugar.  You can have it without topping as well, but buttered.  Recipe to share

Freshly Baked -  Susy Caribbean Banana Cake


The Recipe

Susy's Caribbean Banana Cake
Ingredients
1  1/2 cupful self-raising flour
1/2 teaspoon bicarbonate of soda
1 egg
2 tablespoon Bundaberg rum - dark rum
1/2 cup vegetable oil
1 ripe banana
1/4 cup sour milk (yoghurt mixed with milk)
Mix fruits:
3/4 cup dried sultanas
6 apricots, chopped
10 dates, chopped
1/3 cup candied pineapples

Method
Preheat the oven to 190 degrees C
Line and butter a small round tin about 16 cm size
Mix the dried fruits with the rum, keep aside
In a bowl, mash the banana until smooth, add in oil, egg, sour milk, mix together
Add in all the fruit mixture and the flour at once, mix gently but quickly.
Now you have a cake mix which is very thick almost like a soft scone dough
Place on the prepared tin, smooth and level the top
Bake in the preheated oven for 22 minutes
Reduce the heat to 165 degrees C, cover the cake with foil
Keep on baking for 33 minutes, until cooked
Stand the cake for 10 minutes in the tin before turning out to cool
When it is cold, ice with fruity icing or dust with icing sugar.
To serve: Serve for morning or afternoon tea.





This Caribbean banana cake stays moist, keeps for a few days in an airtight container, it freezes well too.

Will you find such cake when you are there for a holiday in the Caribbean Islands? No, maybe not.  The fruits and the rum, have something to do with the Islands, which give me the inspiration.
