Red Vegetables

Red Vegetables To Rhubarbs.


It's a glorious morning today, good to have a bike ride.  I had a great trip to my sports club, and I did have good exercises for playing table tennis.  From any games of sport that you like, you can have fun, and eventually, you will be good at it.  After one hour and a half playing the game I rode back home and feeling so great that gives me more energy to work in the garden.  I got to tidy up all the mess that I left off yesterday.

Yesterday I harvested red rainbow chard and my red cabbage.  Red cabbage grows all year round, it is convenient to have cabbage plants in the back yard. We can have it fresh for salads, or cook it- stew with apple. It is suitable for cabbage rolls stuffed with a vegetarian filling or meat filling.

 If you have to buy a red cabbage, choose those with a massive head with leaves that look fresh and don't have any blemishes.


Pie with No Pastry
Red Swiss Chard and Ricotta Cheese Pie

The Pie is  Garnished with Red Cabbage Salad

Red Cabbage Salad

2 cups shredded red cabbage
1/2 cup Julianne red apple
1 tablespoon mix herbs chopped finely
(chives and parsley or chives and dills)
nuts-walnuts or pecan for the garnish
Dressing
2 tablespoons red wine vinegar
3 tablespoons vegetable oil or extra virgin olive oil
a pinch of salt
(Place all ingredients in a bowl, mix thoroughly to combine)

The salad.
Place the salad ingredients in a serving bowl.
Add in the dressing, stir and toss gently (prior the serving time)
Add in the nuts to garnish
Serve at once.


The red rainbow chard I will mix with ricotta cheese to make a pie.  It is a very light and healthy dish, it does not need the pastry.  Serve it for lunch or even dinner.

Pie without Pastry
Ingredients:
2 cups cooked red-rainbow chard
200 g fresh ricotta
4 eggs
1/4 cup extra virgin olive oil
2 shallots, peeled and sliced thinly
salt to taste
Mix herbs (mint, oregano, parsley)
Method
Cooking over a stove
Using a heavy based fry-pan
Place all ingredients in a bowl,
( mix them together until combined)
Spray the frying pan with canola spray
When it is hot, pour the cheese mixture on it
Cook over medium heat covered for 8 minutes
Turn it over and cook for another 8 minutes, test it to make sure it is not runny in the middle
Transfer onto a hot serving plate, keep aside for a few minutes while you preparing the garnish.
Serve warm or room temperature.

The Pie



Rhubarbs is a part of red vegetables that are used for cooking pies, crumbles or other dessert dishes and also for muffins or even bread.

This is tips:
Use the stem only as the leaf is poisonous. 
Leave the stem as it is (do not clean / peel.  just chop it up according to the recipe).

Do not peel the Red outer skin!

It should be of 'pinkish' colour.

I understood from the literature that I read, red fruits and vegetables contain essential nutrients that reduce the risk of prostate cancer, lower blood pressure, reduce tumour growth and Ldl cholesterol levels, scavenge harmful free-radicals, and support joint tissue in arthritis cases.

Samples of red fruits and vegetables: beets, cherries, radicchio, radishes, red apples, red chilli, rhubarbs, red peppers, potato raspberries, strawberry, tomato and watermelon etc.

It is good to have a more red vegetable on our diets.
