Miniatures

Mini Muffins    To    Mini Roses

Breakfast, morning tea or lunch can be served with muffins.   Muffin is a quick mix for the individual cake,  sweet or savoury formerly comes from the United States of America.  This muffin is different from the English muffin. 
English muffin is a yeast small, round flatbread.  It is served split into two and buttered, toasted or untoasted.

The American muffins come in different sizes, small cupcakes, large and extra large. Healthy muffins or small ones have to be light, fluffy, moist and not as sweet as cakes.  Those are the characters of a tasty muffin. 

Today I baked miniature muffins.    It's a mini muffin with avocado, herbs, and almonds.   Rich in healthy protein.

Mini muffins are small muffins, I like the idea of small serves.  They are suitable for the children's lunches to take to school.  Delicious mini muffins are excellent too, for parties or any gathering.

Susy's Recipe


Mini Avocado and Nuts muffins
Makes 2 dozens

Ingredients
Number  1: Dry
1 cup self-rising flour
2 tablespoons almonds flakes
a pinch of salt

Number  2: Wet
2 tablespoons vegetable oil
1 avocado, medium size-mashed
1 tablespoon mix herbs, chopped finely
(parsley, chives, dills)
1 egg
1 tablespoon yoghurt
1/2 cup milk

Method
Preheat the oven to 200 degrees C
Butter 2 mini muffins tins
Place all Dry ingredients no 1 in a bowl, mix together, keep aside
Place all Wet ingredients in a large bowl, mix together to make the avocado mixture
Add the dry ingredients to the avocado mixture then mix quickly but gently
Scoop  with a small spoon and put into buttered muffin mould
Bake for 12 minutes or until a skewer inserted into the centre comes out clean 
Take the muffin out from the oven, keep in the tin for 2 minutes, turn them out and cool
on a wire rack
Serve muffin hot-warm or at room temperature

Cooking with avocado:
Most of the time it is eaten raw - for salad, also for drinks or dips.  But you can cook avocado however you should not cook avocado for a long time because the taste becomes bitter.



Mini Roses
I am waiting when my mini roses are well established.  I have been looking after these mini roses for a few years, but they remain small and not spreading.  I found it is harder to look after mini roses than rose bushes or standard roses.

The mini roses need extra care, maybe because I moved them around to often that disturbed the growth, and also the yellow one is in a pot.   I need a professional adviser or tips from friends, I think.

The baking of mini muffins was very pleasing, the recipe worked so well, but the miniature roses need extra care.  Spring is a time for mending and fixing in the garden.
