Cooking In Microwave

Fish To Jam

I have been using microwave ovens since the 80s, from a microwave to microwave convection, cooking and reheating in them are very efficient.  I could say that I could not go without.

My experience using both types of microwaves has been good, they help to speed up the cooking process, however, for baking and roasting, I prefer to use a conventional oven.  I cooked fish fillets vegetables, rice, custard and even jams successfully in a microwave. 

Fish fillet with hot oil dressing, cooked in a microwave successfully.  I am happy enough to do it regularly. This is what is to be done.  Use a dish that is suitable for microwaves cooking, place the fish fillets on a bed of aromatic vegetables, add 1/4 cup water, and cover with plastic, cook for 4-5 minutes (It depends on the thickness of the fish and also the power of microwave).
The dressing has to be cooked over a stove, not in the microwave.

Microwave Jam
Cooking jam in microwave is straightforward, but it is better to cook in small quantity.  Use about 50g of fruits to 100 g only. 


The Red Berries Jam

Recipe:

 Red Berries Jam

50 g fresh strawberries, clean and sliced
8 frozen raspberries
50 g white sugar
lemon juice
Pace all berries, sugar the lemon juice in a bowl, leave it for 25 minutes
Stir it from time to time.
After all, sugar is dissolved cook in the microwave for 1 minute
Take it out, and stir
Put it back in the microwave and cook for 33 seconds until it is bubbly.
Take it out again and stir, then put it back in the microwave and cook for another 33 seconds
(it is bubbly, and watch it make sure it does not overflow)
Cool properly before serving.  I love the colour of homemade jam, it's a vibrant red and not too sweet.

I cook in a small batch and enough for a few servings.

Fish with Oil Dressing

Fish fillets-Blue Grenadier
1 cup - Aromatic Vegetables
- celery, carrots, leeks
1 teaspoon soft butter/margarine
Water to sprinkle
The Oil Dressing
1/4 cup oil
1 shallot, sliced thinly
1 slice ginger, sliced in strips
1/4 cup hot water/stock
1 teaspoon sesame oil
1 tablespoon light soy
salt and white pepper to taste
Method
The fish; 4-5 minutes cooking
Butter the dish, put the aromatic vegetables, and place the fish on top and add fresh herbs
Sprinkle with water and cover the bowl with plastic.
Place the fish in the microwave oven cook for 4-5 minutes, then soon afterwards,  start to cook the dressing. This parallel cooking is very important because we are looking for a freshly prepared hot oil dressing to dress the fish.

Cooking the Dressing needs about 2-3 minutes.

The Dressing
Sauté the shallot, garlic and ginger in a little oil until fragrant
Stir in hot water or stock, bring to simmer
Add in the sesame oil and the soy, and stir
Then add in the rest of the oil, salt and pepper


When the fish is cooked, take the dish out, open the plastic, then ladle the hot dressing over the fish.  Serve at once.

Tips:
Start to cook this dish when everything is organised.
The length of cooking fish depends on the thickness of the fish cut.


Enjoy the dish from Summer to Winter. It is a light meal for all seasons.
