Winter Salad

Warm Salad   For  Winter

Eating light is very important for our health.  The weather is cold, we all long for warm and earthy meals; creamy soups, casseroles, a roast with all the trimmings and decadent pudding for dessert.  Those are great, but sometimes it is good to have a break.  I am sharing a recipe for winter's salad.

Endives and chorizo are a composed salad, so I will add up whatever ingredients that I have at hands.


Warm Salad
Chorizo, sliced
Meatballs, pan-fried - small balls (optional)
3 large shallots, pan-fried
Red capsicum, skinned, pan-fried
Endives, radicchio, lamb lettuce
Salad Dressing
½ teaspoon whole Dijon mustard
¼ teaspoon salt
2 tablespoon olive oil
½ juice of a lemon and some of the rind
Fresh herbs: parsley, chives
Mix all the ingredients together.
Method
Slice the chorizo, pan-fried until crisps, add in the shallot and the red capsicum
Place them on a plate; keep aside while dressing the salad/lettuces
In a bowl, place the endives, radicchio, and lamb lettuce add in the salad dressing
Toss the salad around to mix with the dressing
Arrange the mixed lettuce and shallots, the red capsicums on a serving plate, then scatter the warm chorizo on top.
Serve at once

Other warm salad is red cabbage and bacon salad.  I am happy with my second harvest of yacon,  Apple Of The Earth.  They are ready to pick, this time the fruits are more abundant, sweet and crisps.
