S n a c k s

Elephant Ears


This light stripy sweet biscuit is very popular in Indonesia, it's called Elephant Ears.  You can get this crispy snack just about anywhere there, in shops, in the markets.
The taste of this Elephant Ears biscuits is similar to the Italian fried cookies; Cenci - the carnival pastries, only they are not dusted with icing sugar.  The dough is straightforward to make and very economical too.

The Recipe


Elephant Ears

Makes 16

Ingredients

Chocolate Dough:
60 g plain flour
20 g caster sugar
½ egg
1teaspoon coco powder
¼ teaspoon cinnamon powder
1teaspoon oil

Plain Dough

75g plain flour
25 g caster sugar
½ egg
1teaspoon oil
1tablespoon water

Some extra flour
Oil to deep-fry
Method
Mix the ingredients together, and knead the dough until smooth
Rest the dough in room temperature for a few hours
Knead the chocolate and the plain dough thinly; dust the board with flour.
Make both doughs into a thin square pastry
Place the chocolate on top of every day, brushed with water; roll them into a log
Slice thinly, roll-turning them again to make thinner; then fry them in medium hot oil until crisp. 
Place them onto absorbent paper to drain some of the oil.

When it is cold store in an airtight jar.  It can keep for a few days

To serve

Serve with drinks

I like to eat them for snacking.
