Fish

Baked Sliced Potato and Fish

An easy fix for the end of week meal is fish and potato.  You have to light up the oven still because the cooking is done in the oven.  This time here in Victoria, it is raining, cold, it's mid-winter, so baking is taking place beautifully.  The dinner is cooking in the oven, and the room is warmed.  Lovely.
I do this type of cooking a lot, and yet it works every time.  Quick and effortless,  almost.

Fish and Sliced Potato Baked

Fish and Sliced Potato Baked,  served with a Salad.


Recipe

Baked Fish and Potato
2 white fish-rub with some oil/ and brush with herbs oil
2 potatoes, peeled and sliced
1 lemon
1 tablespoon herbs oil
- basil, rockets, sorrels, garlic and oil (place all the ingredients in a blender)
blend until smooth, add salt and extra fat /oil to keep.
Salt to taste
Method
heat the oven to 200º C
Rub the sliced potatoes with oil and add salt
Place the potato - spread evenly on a greased tray
Bake in the oven for 18 minutes, the potato is almost cooked by this time
Take the potato tray out, brush the fish with herbs oil; place them on top of the potato
Put it back and bake for 8-10 minutes until the fish is cooked.
To serve:
Serve with a salad, and put more herbs oil on top of the fish.


Easy cooking for the last day of the week, then relaxed enjoy the evening.  This is an excellent alternative if you wish to stay in.  Enjoy the recipe and happy cooking.
