Lotek is a favourite salad in Yogyakarta, the region of central Java. It is prepared at home and also can be bought from the street hawkers. The mixture is ready while you are ordering, so it is fresh and flavoursome. It is a mix of a variety of cooked vegetables: spinach, carrots, cabbage, mung beans sprouts and dressed with peanut dressing. It is not a pretty looking salad, but It is a refreshing salad with a beautiful fresh texture.
Freshly Prepared Lotek
Fresh, Delightful and Very Refreshing.
Lotek
kaffir lime leaves, kaffir limes/the rind shredded kaffir lime leaves |
1 cup cooked carrots
1 cup cooked broccoli
1 cup cooked cabbage
1 cup mung beans sprout-blanched
1 teaspoon of shredded kaffir lime leaves
The dressing:
1 cup roasted peanut
1 chilli
1clove garlic
1 slice kencur
2 tablespoon tamarinds juice
1/2 juice of a lime
some rind of kaffir lime
2 tablespoons grated palm sugar
salt to taste
Place all the dressing ingredients on the mortar, and smooth them with the pestle. Taste the seasoning
Add the vegetables then toss them to mix until the vegetables are coated with the dressing.
Taste it again to adjust seasoning. Add in the shredded kaffir lime leaves.
Serve at once.

In Java, this salad is served throughout the year, in dry season also during the wet season. Sometimes it is served with bakwan/bakwan Tahu (look at my older post)
I enjoy this salad here in Australia at any time. To me, it is all season's salad.
One of my daughters is allergic to peanuts, so I replace the peanuts to cashews; however the taste is not the same. The peanuts give the specific flavour that Lotek is Lotek.
