Chinese Cooking In China

Winter in Foochow

My last post about Chinese cooking was Chinese Cooking Abroad.
It was chop suey, it is one of the most popular dishes that is served in a Chinese restaurant in the west.

This time is about Chinese Cooking In China.  I tried to attempt a dish from Foochow based on Kenneth Lo recipe; Prawns On The Snow Mountain- Winter in Foochow.
This dish is cooked in the winter time, beautiful prawns are fried encased in egg white.  The egg white has represented the snow.

Prawns on the Snow Mountain


Ingredients:
8 egg whites
2 teaspoons cornflour
½ teaspoon salt
30g minced smoke bacon (pan-fried)
a tablespoons chopped parsley
180 g fresh peeled prawns (10 prawns)
Method
Mix salt, cornflour and 1 egg white into a smooth pate.  Turn the prawns in the paste. 
Place in a wire basket and deep-fry in hot oil for 1 minute, Drain and put aside.
Beat the remaining egg whites with a pinch of salt, until quite stiff.
Place half of the egg white on a dish.  Lay prawns evenly over it.
Fold the remaining egg whites over the prawns.
Gently lower the prawns encased in egg whites into a pan of boiling oil
Baste in oil for three minutes.  Remove and drain.
Sprinkle the top with chopped bacon (pan-fried) and chopped parsley.



This is a colourful and exciting dish.  The taste is delicious, I am not too sure about my presentation.
