Non-Baked Pie

Ricotta, Spinach and Caramelised onion Pie

Onion - caramelised onion, look up my older post. 
Caramelised onions are so versatile.  Can be added to a verity of dishes.  This non-baked pie is one of them.
Combination of cheese and caramelised onion is excellent. Gruyere and Goat cheese is excellent for this pie dish.  I use ricotta cheese for a lighter version, but the taste is so delicious

It is a non-baked pie, cook it over the stove using a heavy based frying pan. 

The Non-Baked Pie
Served with Carrot Salad and Almonds.



Recipe for the Non-Baked Pie: Ricotta, spinach and caramelised onion pie
The ingredients:
175 g fresh ricotta cheese and 1 tablespoon olive oil
3 large free range eggs
1 cup fresh spinach or silver beets
2 tablespoons caramelised onions
Salt to taste
Olive oil for pan frying
Raw almonds
1 egg white
The pastry

1 cup plain flour
A ¼ cup of warm water
1tablespoon olive oil
Place ¾ plain flour in a bowl, add in the water, oil and mix together
Use the remaining of the meal.  Knead the dough on the floured board until soft and satiny
Wrap in plastic, keep aside until ready to use.

The Filling Ingredients and The Cooking Process

1. ricotta, eggs & oil, -  2. the spinach
and the caramelised onions

roll the pastry thinly
almost see through

transfer the pastry onto an oiled fry pan
put the filling, spread evenly, put
the pastry on top to cover the filling

cook the pie over low heat for
ten minutes

drizzle some oil before turning over
cook for 6 minutes

cook for another 6 minutes
place raw almonds and brush all over
with egg white, turn it over to brown the almonds

after cooking for another 6 minutes, then
turn it over, the almond is golden brown and
the pie is cooked 
(25 - 30 minutes cooking time)

It is a beautiful vegetarian dish, lovely for a light lunch.
I serve the pie with a salad or verity of lettuces.

  1. Wow Mum, it looks beautiful! We'd have to make a much smaller pie as I don't have such a lovely big pan! Thanks for thinking of us when you made this post. We'll try it out this summer.

  2. Hi Jane, have you cooked the nonbaked pie. You do not need to cook a big one, small size pan is ok. Reduce the ingrediets
