Roast to Rice

Scone, cakes, for the kids to come home for afternoon tea,  pasta and meatballs for their dinner, they loved them.  It has been a while they did not come to visit because  Mary Rose started school this year, she is in grade 1. Thomas is at three years old kinder.  They both are settled very well, so far they are enjoying their school holidays, they went to the zoo, to see a movie etc. Now they are spending times with us.

The grandkids are under six years, but they love their food, their mother introduced a different kind of food since they were tiny. They always to have their dinner together with the adults.  In term of eating, they are easily entertained.  It makes my works not too hard, I could prepare any cooking that I wish to share. 

For the first time I did sourdough baking, it looks tasty but rather dense.  I invited the kids to see at my cooking.  Mary Rose and Thomas were smelling the freshly baked sour dough bread from the oven. They did not say much, as at their own home they have better home baking bread or cakes.  But I know that they liked to look at it.


They had a roast dinner on Saturday instead of on Sunday.  They liked it, it was roast beef with the trimmings.  The grandkids enjoyed it very much and also they liked the Yorkshire pudding.  They were the best Yorkshire pudding I ever baked.  They were large and light and puffed up beautifully.

Recipe
Susy's Yorkshire Pudding
1 cup full plain flour
2 eggs
3/4 cup milk
1/2 teaspoon salt
Mix all the ingredients together, to make a smooth batter.
The beater should be as smooth and slightly thicker if you would make a pancake batter.
Keep the batter in the fridge at least 1 hour before baking. (the longer, the better)
To bake
Into the hot oven at 220 degrees C
Deep muffin tins (large size - 6 moulds), put some dripping from the roast beef
Place in the hot oven until the tin is hot, then pour the butter into the moulds, halfway full
Bake in the hot oven for 16 minutes, turn the oven off. 
Take it out, then turn the pudding upside down, leave them in the tin and put them back in the oven.
Serve the pudding hot with the roast beef.  So Delish.

The days that the grand kids spending times with us were so busy, but we tried to amuse them.  We took them out for a little, and today their Pop took them to a park.  The weather was not very good, but they were happy enough to play in the park, even though they did not stay for long.  I admired my daughter Mel, she has vivacious three little children, and she manages the children well enough.

For Sunday lunch I cooked yellow rice with the chicken Galatine stuffed with mushrooms, served with cabbage, cauliflower and omelette roll etc.  My grandchildren loved the rice but not to keen with the chicken or the egg. 
Thomas my grandson, my sweet Thomas screamed while he was eating his food, and said: "what is this, it yuuukkkk".  "I doonntt' like it".  "Naanaa is the worst cook in the world, she is the wooorrsttt coookkkk in th whooollleee woorrldd".  I did not hear at first as I was busy to serve other things at the table.  Then I realised what was going on,  then I laughed, and laughed.   Thomas is a funny 3 years and eight months old baby.

Thomas is a smart and funny boy, the night before he gave me a grand complement of cooking an excellent roast dinner.  He said that he ate the best food ever.  He loves complementing and encouraging people.  
He did not eat the chicken of course at lunch, he does not like the taste of Portobello mushrooms, any mushrooms.   At least he ate their breakfast, the giant pancakes and scrambled eggs.  Nevertheless, we had a beautiful Sunday and a pleasant afternoon too.

Before they left, Mary Rose said that she loves to come again and hope to see us soon. I think they were happy and had fun with us, we do like to visit them too.

The house is tranquil now, they are on the way home.  I think they will be arriving at their home at half-past four.  To be honest, I am tired now, but I will be OK by tomorrow. 
It was good to have them around.  It was great to see the young family are happy and healthy.

I look back now, I am chuckling by myself because I remember that baby Henry was humming "Twinkle Twinkle Little Stars" happily while he was playing with his toys, in my mind I said: oh yeah, so cute, he did it with the correct tune.  And then I could hear another song, I looked at him, it's him, humming the "...Jesus Christ...Super Star".....on and on, ..........he did it so well, oh my goodness!.  He is only seventeen months, he is a BABY.    This kid is so funny, so smart and so cute.  They all are so funny.  What can I say, thank you, kids!
