P a n d a n u s

Pandan Cake


It is a fluffy sponge cake, which is flavoured with the juice of pandanus amaryllifolius leaves.  The origins of the pandan cakes come from Indonesia, Singapore, Malaysia and Philippine. 
  
My mini Pandan cake is a sponge cake that is flavoured with Pandanus extract.  The Pandanus extract is readily available here in Australia.  Most Asian grocery shop or in the large Supermarket sell the Pandanus extract.  This extract is different from the vanilla extract.  It has a distinctively fragrant, the colour is green because its made from the chlorophyll of the pandanus leaves.

The  Recipe  of  The  Mini  Pandan  Cake

Mini Pandan Cake


Ingredients

¾ cup cornflour
¼ cup self-rising flour
1teaspoon cream of tartar
¼ teaspoon bicarbonate of soda
A ¾ cup of sugar
4 eggs
1teaspoon pandan extract/essence
Method
Preheat the oven up to 175 degrees C
Lined and butter a shallow muffins tray
Put the dry ingredients together and sift them a few times
Cream the sugar and the eggs until thick and creamy about 10 minutes
Add in the pandan extract/essence, and beat for another 1 minute
Stir in the flour mix, and fold in gently
Spoon the mixture into the prepared tin/tray
Bake in the preheated oven for 10 minutes
It makes approx 12 mini sponges
Cool on a cooling tray away from draft
 Join the cake with cream Chantilly and top it with coconut icing.
To serve: for the morning- afternoon tea, enjoy with a cup of tea or coffee
