Pork Meat-Loaf. 
Meat-Loaf  Susy's Style


Beautiful home cooking for a family meal, this delicious meat-loaf is garnished with refreshing salads.  Very easy to prepare, it is right for a busy young family.  The meatloaf can be enjoyed cold or room temperature, with a sauce or without. It is an excellent dish to take out for a picnic too.

Pork Meat-loaf with Garnishes


The Meat-Loaf


Meat-Loaf Susy's Style

Ingredients
500 g minced pork
2 eggs, lightly beaten
1 tablespoon almond meal
9 fresh buttons mushrooms, sliced
1 cup grated carrots
1 tablespoon chopped flat parsley
¼ teaspoon ground black pepper
1 red onion, chopped finely
A sprig of fresh rosemary
1tablespoon olive oil
¼ teaspoon salt

 For wrapping the meatloaf
125 g pancetta, sliced thinly


Method
Preheat the oven to 175 degrees C
Place all ingredients in a large bowl and mix them thoroughly
Shape it into a long loaf 25-30 cm long
Wrap it with the pancetta
Place it on a baking tray, and bake it for 35 minutes

To serve: serve hot or cold
Sliced the meatloaf, serve with baked potato, and salads or vegetables
