B e e t r o o t s

Roasted Beetroot

I am cooking fresh beetroots from my garden, also I am roasting them for the accompaniment of pork.  This rainbow roasted beetroots will enhance the taste of the succulent of pan fry pork fillet. The fillet is wrapped in pork mousse, duxelles mushrooms and prosciutto. The sweetness of the beetroot is intensified after roasting, that it works very well with the savouriness of the fillet of pork.  A delightful dish, delicious and beautiful on a plate.

A   Note   For   Roasted   Beetroots
Preheated the oven up to 200 degrees C

Clean and wash the beetroot
Cut a large beetroot to 6, skin on
Place the beetroot on to the baking tin
Drizzle with some vegetable oil
Bake in the preheated oven for 37-40 minutes
Turn over the beetroot at least once during baking.

Place on the serving plate, sprinkle with herbs
Serve for garnish any meat dish.
Or serve as a warm salad, add some cheese, Feta or Goat cheese.

Not a long time ago I posted about duxelle mushrooms.  This is one way how to use the duxelles.

In this cooking, the duxelles mushrooms for the lining between the prosciutto and the pork mousse to wrap the pork fillet. They gave extra flavour and contribute the aesthetic appearance to the dish. The pork sliced beautifully.

In my book, this cooking is fine cooking.  It needs a lot of preparations and cares, and attention to details, and of course only the best ingredients are used.

I like to do fine cooking, even though I do not do it very often, but if I decided to do it, I want to do it well.
