Nasi Goreng is a fried rice Indonesian Style. It is a rice dish which is stir-fried cold steamed rice with a little oil, spices and other ingredients.
There are two types of fried rice, one is simple fried rice (nasi goreng), and the other one is fried rice deluxe (nasi goreng istimewa).
The Nasi Goreng is stir-fried rice in little oil with spices (chilli, garlic, salt) and garnished with a shredded omelette. It has less and more simple ingredients than the nasi goreng istimewa.
The Nasi Goreng Istimewa is stir-fried rice with extra luxurious ingredients - prawns, meat, fish, shredded omelette, and garnished with telur Dadar (fried egg).
It is also served with side dishes, a cucumber salad and prawn crackers.
Sego Goreng is the tradition of Javanese fried rice. It's cooked from the leftover rice the day before. Usually, the nasi goreng is cooked in the morning to serve for breakfast. Saute the spices with oil, add in the cold rice, cook until the rice is warmed up, add in some kecap manis (sweet soy). Stir, turn and toss around until the rice looks lovely golden brown colour. Add in the shredded omelette and serve hot.
At my parent's house, the nasi goreng sometime was cooked for the evening meal as well. But it was very seldom.
I do not cook Sego Goreng very often for my family, as they preferred their steamed white rice with the garnishes. If I do, I have my own version of Sego Goreng. My Sego Goreng has vegetables, and some meat or bacon cut finely. It is served warm, sprinkle with fried shallots, shredded omelette and accompany with prawn crackers.
