Resoles  -  Javanese Style


I have a beautiful memory of this Javanese Resoles.  At my parent's house, often prepared and cooked a lot of this delicious savouries.  It is braised meat and vegetables for the filling of pancakes.
My mother used to serve this savoury for special occasions;  prayer meeting and parties.

I have been cooking this resoles for my family, since the children were small, we love it.  I do not cook the filling from scratch all the time,  but I make use of the left over of a roast.  Another way to consume a cold meat roast.  The resoles keeps well in the frezer.  It is suitable for a light lunch or just for snacking.

The Recipe

Resoles Javanese Style


 

The Pancakes Mixture
Makes 10 pancakes

Ingredients

1cup plain flour
1cup water
½ teaspoon salt
3 large eggs
2 tablespoons vegetable oil

Method

Place the flour on a mixing bowl
Add in the salt, egg and the water, mix to make a smooth batter
Stir in the oil, and mix it well.  Let it stand to rest for 10 minutes.

To cook the pancake:
Using the medium size of non-stick pancake pan or fry-pan
Heat the pan over medium high heat; be sure that the pan is hot
Brush the pan or spray with oil, and then pour some of the batter (a ladle full)
Swirls it around until the mixture cover the surface evenly
Cook until the batter looks dry and lifted off the sides
Take it off; place the pancake on a flat plate.
Repeat this process until the batter is used up

The Filling

200 gr mince beef or chicken
1 onion chopped finely
Oil for sautéing and for frying the resoles
1 large carrot, peeled and diced finely
2 potatoes diced finely
1stalk of celery, chopped finely
1 cup stock
Mix herbs: parsley, chive
1teaspoon sugar
1/3teaspoon salt
White pepper and some nutmeg
1tablespoon plain flour for thickening

To cook the filling

Sautee the onion with oil, until softened; add in the meat and cook to brown
Add in the carrot, celery and potato, mix together then stir in the stock
Cover the pan and cook the meat mixture over slow heat for 45 minutes
When it is soft and less watery, add in the herbs, pepper and salt to taste
Stir in the flour to thicken the mixture
Keep on cooking until the meat mixture does not stick onto the pan

The resoles

Place 2 tablespoons of the filling on the pancake
Wrap it to shape like a small envelope
Do this process until you make 10 resoles
Fry in shallow oil until golden brown
Put the resoles on an absorbent paper, to drain the excess oil

To serve:  as a snack or as an entrée
