A very popular sweet in Java for snacking. Traditionally it is made of peanuts and palm sugar. In my recipe, I use white sugar instead. Recipe to share.
Gula Kacang -Javanese Peanuts Cluster.
Gula Kacang
150 g raw peanuts
¾ cup white sugar
1 tablespoon water
1teaspoon/a cube of butter
1teaspoon lemon juice
Place sugar, water on a pan
Melt the sugar over medium heat
Add in lemon juice, butter
Bring it to simmer and become bubbly
Add in the nuts and keep on stirring
The mixture looks caramel brown and still bubbling
Shaping:
Spoon the nuts mixture and place them on to baking paper
Let them cold, then transfer to a storage container
It makes approximately 13, and let it cold
Keep them in an airtight container, to keep fresh.
Enjoy with a cup of tea or coffee.

1. white sugar and a slice of lemon |

3. add lemon juice, butter, and cooking until bubbly |
4. add in the peanuts, keep on cooking over low heat |
5. to reach the caramel look finished cooking then time for shaping. |
6. spoon the nuts mixture place them on baking paper |
Susan, my third daughter, cannot eat it, unfortunately, because she is an allergy to peanuts. She can always have the gula-kacang but using macadamia or cashew nuts instead.
It is available everywhere in Java from the market place up to the shops.
This crunchy peanuts cluster-gula kacang was one of my father’s favourites.

Excellent mum - I'll make some for Edwin: he loves peanuts, and I happen to have loads of palm sugar in the pantry (but not so many peanuts .... Hmmm)
