Stretch and Stretch (Continued)

Today is the day that I wish to bake the pie.  It is so easy when things are organised.  We have the fresh water pastry or phyllo ready.  For the pie, these are what I need: six eggs, chopped fresh leeks and fresh ricotta cheese.

The Pie is baked beautifully, and I am sure the taste is delicious.


The Cooking-Baking
Preparation for the filling: mix together the egg, cheese, leeks add in salt and pepper to taste, also add a tablespoon olive oil, stir and mix together thoroughly.
Baking Preparation:
I put the oven on to reach at 185 degrees C, and get the pie tin.
Clean and dry the tin, and I must butter the tin.
Have a mixture of margarine-butter with oil to brush the pasty in between
I place a layer of the pastry on it and patch up all holes with extra pastry
Then I brush with oil mixture over the pastry thoroughly, Then I put another sheet of pastry.  I must do another layer to make the pie extra flaky.
Pour the cheese mixture on it, and cover with a layer of the pastry
Brush it again with oil mixture and don’t forget to patch up the whole
Put some more pastry, put them artistically, make sure the pastry laying with a pleated pattern to get beautiful curly effects.
Bake in the preheated oven for 25 minutes or more until cooked and golden brown.
To serve: serve hot with a side salad.


The pie is served for six to eight people.



How To Do


Now you have it, homemade pastry to make a delicious cheese pie.  You could fill the pie with spinach and cheese or only eggs and cheese or have sweet pies, such as pumpkin pie.

This pie freezes well; however, you have to reheat in the conventional oven, not microwave oven to keep the light and crispiness of the pastry.
