Pumpkin Confit (Continued)

Keeping the Confit

Place it in a jar, make sure the confit is covered with all juices/oil or keep it in the dish where the confit was cooked,  cover it with plastic wrap and refrigerate, especially if it is needed for the next day.

Serving the Confit
Serve the confit with pan-fried or grilled meat, fish or chicken.  I am using the pumpkin confit for cooking lamb in parcels.  I will shear the lamb first, then add the confit, place in phyllo sheets and baked for a few minutes in a hot oven.

Recipe-Susy's

Baked Lamb Parcel with Pumpkin Confit

Serves 2
255 g - 2 pieces lamb steaks ( use leg of lamb )
oil and butter to seal the lamb
6-layer buttered phyllo pastry

½ cup fresh breadcrumbs
4 tablespoons pumpkin confit
Spices: freshly ground white pepper or cumin powder

Method

Seal the lamb until brown with the oil and butter 1 minute each side.  Keep aside
Take 3 layers buttered phyllo, put and spread half of the breadcrumbs
Place the lamb on it sprinkle with the spices, and then topping up with 2 tablespoons- pumpkin confit, wrap the lamb into a parcel, like the shape of an envelope.
Bake in a hot oven 175 degrees C for 6-8 minutes
Serve hot with a salad


To Pan Fry The Leg of Lamb Steaks


Fun in the kitchen:
Once you have the sauce, condiment or confit which are suitable to serve with the dish that you cooked, cooking in the kitchen is so fast, and the food tastes good, and cooking becomes enjoyable.
The cooking for the lamb steaks will take you for 4-5 minutes with three minutes resting.  In the same time cook the vegetables to go with the lamb.  When it is cooked, serve the steak with the confit and garnish with spiced yoghurt and vegetables that you like.
