Corn, Tomato, Cabbage


Warm Corn and Tomato Salad

Today's cooking is corn on the cob for a warm salad.  Pan-fry the corns, tomatoes with vegetable oil, until the corns are caramelised and the tomatoes are soft.  Cook some green peas or broad beans to go with the salad.  Add some chopped avocado and spring onions. The salad is served with lime dressing and garnished with corn chips.

The corn and tomato salad is fun to eat, scoop the warm salad with plain corn chips, eat by hand.  It is easy enough.  A fresh and healthy vegetarian warm salad with lime juice to add extra freshness.



The Preparations

Scrape off the corns from the cobs, chop the tomatoes, spring onion, place them in a large bowl.  Add some chopped avocado, salt two tablespoons olive oil and one lime juice, toss and mix together gently.  Transfer onto a serving plate then garnished with plain corn chips,  Serve at once.
The salad is delicious to be eaten on the same day, a leftover does not keep.



Green Cabbage
Warm green cabbage salad with crispy bacon is another salad that I like to have, especially when the cabbage is in season and inexpensive.
It is very delicious to eat it on its own, or a sliced crusty bread can go with it.

Warm Cabbage Salad with Crispy Bacon

Sauté shredded green cabbage in olive oil for a few minutes until cooked but still crunchy.  Add some salt, white pepper to taste.  Shallow fry thinly sliced bacon until crisp,  you can use prosciutto.
Place the cooked shredded cabbage on a serving plate then garnish with the crisp bacon and fresh lime.


The Preparations
Savoy green cabbage leaves, discard the middle part
wash it well

Cut or shred finely


Sauté in olive oil for a few minutes until cooked
Transfer onto a serving plate

Fresh and very healthy warm salads.  I like the idea 'cook fresh food, and make it simple'. Indeed it is agreeable.
