Mini Lasagna


Mini Vegetable Lasagna


The dish is a light, creamy and delicious lasagna,  serves two for a main meal or four for entrée.  A vegetable lasagna dish which is one of our family favourites.

These are what you need:  mixed fresh vegetables, carrots, pumpkin, potatoes,  cauliflower, pasta sheets, cheese sauce and Parmesan cheese.

Ingredients (approximation only)

Small instant lasagna sheets

The filling
1 cup full chopped mixed vegetables-carrots, pumpkin and cauliflower
1 tablespoon mashed potato
1 tablespoon Parmesan cheese for the filling
1 egg yolk
Cheese Sauce
Two cups of milk
2 tablespoons olive oil
1 tablespoon plain flour
60 g mixed cheese – tasty cheddar and Parmesan

Cooking the filling

Cook the vegetables for a few minutes until soft-steamed or sautéed.
Add in the mashed potato, egg yolk and the cheese and mix together
Season with salt and white pepper

Cooking the cheese sauce

Place the milk, olive oil in a saucepan, cook over medium heat until warmed
Take the pan off the stove; add in the flour then whisk it well
Put it back on the stove and cook over medium heat, keep on stirring
Bring it to the boil, stirring constantly and cook for a few minutes until bubbly and the sauce is thickened
Take off the stove, add in the Cheeses, nutmeg/mace and mix until smooth

It is not a new dish, most of us know how to cook lasagna, it is an Italian dish which is very popular here in Australia.  Thanks to the Italian community from their generosity of sharing their recipes and teaching us about their fresh, abundant produce and delicious cooking.

To serve: slice and serve hot for four people for a first course, then follow by a meat, chicken or fish dish with a salad or vegetables.  That is the standard practice for Italian daily meals.

On that note, I wish to say hi to the Ferrarretto's family, thanks for the good times and for teaching me how to cook and to serve Italian dishes.  It was so much fun, and I had learnt a lot in 1974, and now I still keep on learning.

The vegetable lasagna is my interpretation, and you are all welcome to try to cook it, you don't need a recipe, but a little guide as I wrote above may make the cooking easier.
