Cooking outdoors is a good thing, keeping the kitchen clean and giving less smell to the house, and in spite of wet or dry weather, it can still be done. Summer to winter cooking with BBQ is all right;
it depends on the dish that is going to be cooked.
I had the experience to cook a whole chicken in the BBQ, and it worked out so well. What I did, I wrapped a spiced-herbs whole chicken in a few layers of silver foil, and then I put on
a baking tray. I put on the hot BBQ
that has a lid, cook with the lid on for an hour, switch off the BBQ but keep
the cooked chicken in it for thirty minutes further.
The chicken was so tender, moist. I served it with flatbread, salad and yoghurt.
More cooking ideas are using the BBQ, not only cooking
sausages, steaks or lamb chops. I may
try to bake the Australian Dumper on it one day.
Cooking The Chicken
Wash and dry chicken no 16
Rub it with salt, oil and lime juice and mixed herbs: thyme, fennel seeds and crushed garlic
Wrap it with baking paper first, then layers of foil, place it on a baking tray, bake on a hot BBQ for one hour. Switch off the BBQ, keep the chicken in it for another thirty minutes.

Carefully as it is hot.
The chicken is very tender, and there's a touch of smokiness, delicious. Serve the chicken with salads, bread as you like.
I did some flatbread which I cooked in the kitchen, and I served the chicken with them, along with herb yoghurt.
The ingredients for the flatbread: (approximation)
- 1 cup plain flour, salt and 1 tablespoon oil and 1/3 cup hot water
- Mix all together, to make a soft dough, knead it until smooth, rest it for a few hours
- Roll the bread dough, make it into small balls, then flatten them out, roll into very thin circles
- Cook on a hot griddle or pan until puffed a little, turn it over and cook this side for a minute further
- Transfer on a plate
- Do the rest until all finished
- Serve in the same day.
