Ricotta Herb Muffins


Delicious Ricotta Savouries

Ricotta herb muffin is a delicious muffin for morning tea or lunch.  It is light, healthy for snacking or for a midday meal.

The recipe is my recipe, and it is easy to follow also inexpensive to make.

Susy's Ricotta Herb Muffins

Ingredients:
175 g fresh ricotta, and 1/2 cup water
1 1/2 cup full of self-raising flour
1/4 teaspoon bicarb of soda
2 eggs
1 tablespoon yoghurt and 1 sundried tomato, chopped
1/3 cup vegetable or olive oil
2 tablespoons chopped mixed fresh herbs
a pinch of salt

Method

  1. Heat the oven up to 210 degrees C
  2. Place the flour in a large mixing bowl, add in the bicarbonate of soda- salt and the chopped mixed herbs, toss them together.
  3. Add in all ingredients, and mix them together quickly but gently.
  4. Now you have a mix with drop spoon consistency.
  5. Spoon the mixture onto the buttered muffin tin
  6. Bake on the preheated oven for 16-18 minutes
  7. Take them out from the oven, rest for 5 minutes before turning on a cooling tray.

Muffins are ready to bake.


Put the muffins in a hot preheated oven, and bake for 16-18 minutes.  Please check the heat of your oven.  If your oven is  fan forced, you could bake them for 16 minutes only

Rest the muffins for five minutes before turning out on a cooling tray.

Serve the muffin with butter, enjoy as it is or it can accompany the hot soup.
