LEFTOVERS


Using Leftovers

No, it is not the leftovers of Christmas Dinner, but it is a leftover from the previous cooking for the family.  It is a small baked leg of lamb.  What am I going to do with it?  I could do a few dishes, slice the meat and serve it with bread, yoghurt and salad.  The other dish is simple meat curry served with steamed rice and maybe for filling of sandwiches.

Maybe it is not original, but at least you have a meal which is cooked at your home from scratch, it is so yum and so fresh.




Susy's Quick Pleated Bread to Serve the Lamb

1 cup plain flour
1/2 teaspoon salt
1 tablespoon olive oil
1/3 cup warm water and a little more
Mix all ingredients together, to make a smooth dough
Let is a rest for 25 minutes
Roll the dough, shape it thin pastry, flat and round
Gather the thin pastry round in the middle and put on a hot plate
Cook until lightly brown, turn it over and cook for a minute
Take it out,  drizzle with olive oil, serve straight away

I serve this pretty pleated bread with the leftover baked lamb dressed with yoghurt dressing.

Yoghurt Dressing
1 cup Greek Yoghurt
1/3 cup Chopped mints, dill.
1 tablespoon olive oil
Juice of a half lemon
salt to taste
Mix them together,  keep well refrigerated for two days

Leftovers from the Christmas feast, such as ham, turkey, pork and maybe seafood.   A few suggestions for these leftovers.

Susy's Kedgeree with Asian Aromatic Herbs



Egg rolls with cabbage stuffed with prawns or salmon that is another delicious dish, and it is easy to make.  Use napa (Chinese cabbage) instead of Savoy cabbage.

For ham, pork and turkey, they are easy, use them for sandwich filling, serve them cold as salad dishes.  Or use them for filling steamed dumplings, croquettes and filling of pancake rolls.

A salad recipe for you, using meat leftovers, it is delicious.

Susy's Trio Meat Salad

Ingredients
1 cup thin strip sliced ham
2 cups thin strip sliced pork
2 cups shredded turkey
1 cup julienne of celery
1 cup julienne of carrot
1 cup shredded cos lettuce
1 red apple, cut julienne
Dressing
1 teaspoonful Dijon mustard
1 juice of a lemon
1 table olive oil
3/4 cup real egg Mayonnaise
Salt and freshly ground white pepper to taste
1/3 cup finely chopped chives, fennel fronds and parsley
(Mix all ingredient together to make a smooth mixture)
Use the dressing at once.

The salad
Place the meat and other ingredients in a large bowl
Add in the dressing, stir and toss them together gently
Transfer onto a serving plate, place the trio meat salad on a bed of lettuce.
Enjoy with freshly baked herb rolls or any fresh bread as you like.


Have fun with the leftovers.  Make mini croquettes and freeze them to serve with drinks for the New Year's Eve.
