Christmas Cake (Continued)



The Baking Of  The Christmas Cake

Heat the oven to a slow heat at 135 degrees C, place the cake in the centre and bake for 5 to 6 hours.  The cake was baked for 5 hours and thirteen minutes.
The cake is ready to bake, in a slow heat oven for  5-6 hours
The  large bowl is washed, than keep away.  Next year will be 
used it again for Christmas Cake 2013




Check the cake after two hours baking to make sure that it has not brown the top too quickly.  I place a piece of foil on top of the cake after four hours baking, and reduce the heat of the oven to 125 degrees.  Continue baking for another hour or more.

Soon after the cake is out from the oven, pour some more brandy
all over the top.  Cover with foil to trap the steam and top it up with
a tea towel.  Leave it overnight to cool.




It is essential to trap the steam of the cake this way
The cake will be very moist.

The cake was baked beautifully, it was dark brown but not burnt.  Perfect!


Morning After
In the morning, open the wrap, add some more brandy on the cake
Wrap tightly and securely with more foils

Wrap the cake in a cloth, and place it in a safe place.
The cake will keep for months.


Time to clean up now, wash the tea towels, glove or mittens.
