Spring Delights


Delight dishes for a midweek dinner.


Stuffed Large Mushrooms

4 Large brown mushrooms
Salt and some oil to rub the mushrooms
Filling
1 large cooked potato, peeled and mashed
1 carrot, peeled and grated
1 shallot or spring onion, sliced thinly
1 egg
1 tablespoon Parmesan cheese
1tablespoon oil
1 tablespoon mixed fresh herbs: thyme, flat parsley, mint
Salt to taste
Mix all ingredients together until all combined
Stuffed Large Mushroom served on a bed of salad greens, garnished with
small stuffed mushrooms.
Filling up the mushrooms
Discard the stem of the mushrooms, and then rub with salt and oil
Fill up the cavity of the mushrooms with stuffing
Baking
Place on the greased baking tray and drizzle with a little oil all over
Bake in a hot oven at 180 degrees C for 22 minutes. Until the mushrooms are cooked and the filling golden brown.
To serve
Serve hot with salad greens

Stuffed small mushrooms for an extra treat, it works the same with the large one, you could have different stuffing, improvise!.  Bake at 180 degrees C for 14 minutes.

Egg Pasta and Spinach Pasta
I cooked my homemade pasta,  the spinach and Egg pasta, dressed with tuna, fresh herbs and grated Grana Padano cheese.





The Pasta
It took about 10 minutes to boil the pasta in salted boiling water.  Drain the pasta, add in some olive oil, stir well together.



No dessert, the salad greens is enough to replace fresh fruits.  It was a delightful meal for warm spring weather.
