No Bread No . . . . . .

No Bread, No Rice what do I serve the chicken with.  It is time to improvise, use what you got.  Cooking whole bird of a chicken, baked in the oven, I thought that would be nice to serve with rice, potatoes, or bread together with a salad. But I have no bread and no rice but plenty of flour.  Quick bread is going to be, and I will bake it together with the chicken.

I will show you what I did.  I cooked the chicken in the oven, and at the same time, I baked the quick bread and placed it on the chicken to get a better flavour.  What you have to do is take some of the meat from the breast, keep aside (you could cook for another dish).  Cut the chicken into two, cut it through the backbones, turn it over, push it down to press to make the chicken lay flat.  Now you could see the breast bones, then put the skin back to cover the bones.  On top of the breast bone, you will put your quick bread and bake it at the last 18 minutes of cooking.

Step By Step
Herbs and Spices: two tablespoons mixed fresh herbs, juice of an orange/blood orange, a quarter preserved lemon, a half teaspoon of each turmeric and chilli powder
Mix the ingredients together to make a rough paste.  Rub the paste onto the chicken, place it on a baking tray, drizzle with some oil then bake in a hot oven at 200 degrees C


The chicken was cooked in a hot oven at 200 degrees for 26 minutes, then place the quick bread dough on top of the breast bone, lower the temperature to 175 degrees C,  continue cooking for 16-18 minutes.

Quick Bread
1 cup full self-raising flour
1 tablespoon melted butter and 1 tablespoon oil
1 tablespoon yoghurt and 1/3 cup milk
1 tablespoon chopped herbs and a pinch of salt.
Mix all ingredients together, knead lightly
(the dough is sticky, rub your hands with flour before knead it)


The Dinner
Dinner was served with boiled vegetables, and no gravy as the spices were flavoursome.  You don't miss it, but if you wish to have the sauce, by all means.


The chicken looked dark brown, but it was not dry.

You may like to try cooking this way, it is practical cooking and does not take too much time.  The pumpkin was baked separately, it was wrapped in foil.
