Beetroot - Pasta (Continued)


Dry Beetroot And Spinach Pasta
It took about 10 minutes to boil the spinach pasta, I think because it is too thick.  I will make a thinner spinach pasta with two eggs instead of one next time.  Maybe it will cook faster and taste better also.

The pasta dish was acceptable, served with a light mushroom and chicken sauce.

To cook the sauce.  Sauté mushrooms, bacon, and herbs in olive oil, add chopped chicken breast and cook over low heat for a few minutes.  Add in milk but not cream for a lighter sauce and keep on cooking for a few minutes.  Serve at once.

Egg Pasta

Fresh Egg Pasta 
Recipe: Susy's

1 heap full plain flour
2 small eggs (50g), free-range eggs are available in the Farmers Market.
Mix the two ingredients together to make a soft dough
Knead lightly, keep aside to rest for an hour
Roll the dough into a thin sheet
Cut with a knife into strips, now you have a flat pasta strip. (of course, you could use the pasta machine if you have one)
Put onto a tray to dry or cook in salted boiling water for 8 minutes
Serve pasta with any sauce that you like.

Spinach Pasta No 2


Fresh Spinach Pasta
Recipe: Susy's

1 heaped full plain flour
2 tablespoons spinach puréed
1 large egg (60g)
Mix the spinach puréed with lightly beaten egg
Add into the flour, mix together to make a soft dough
Knead the dough gently, keep aside to rest
Roll the dough into a thin sheet
Cut with a knife into strips or shape into something else
(if you have a pasta machine, you could work faster, and shape the pasta smoother)
I did some of it for farfalle pasta
Put onto a tray to dry or cook in salted boiling water for 8 minutes

Fresh Farfallone Pasta



I cooked the fresh farfalle, and I served it as a mixed salad with some greens.  Boil fresh farfalle for 6 minutes, dress it with the best olive oil, salt and grated lemon rinds.
It is a very light meal, healthy food for children and adults.

It was fun, I am telling you.  Try the recipe, give it a go, you may like it too.  You can make double batches so you could keep them dry for next time.  

Pasta can be served at any time, for lunch, for dinner or as an entrée for a dinner party.  Homemade pasta is delicious, and you can improvise, you can add different flavours.

So far I did beetroot pasta, while in the mood of making pasta, I made spinach pasta and egg pasta.

The cabbage from the Farmers Market was so large, I have been cooking it for a few dishes, soon I will share the recipe.  Stay Tuned.
