PUMPKIN (Continued- II)


Cooking with Pumpkin

Today I cooked the remaining grated pumpkin for an exciting dish, stuffed pumpkin leaves rolls.  To refresh the last cooking: soup, ravioli, scone and bread, with today's cooking there are altogether five dishes.

I think of my grandfather, who loved pumpkin leaves in his ‘sayur lodeh’.  My cooking will have a similar taste.

Sliced Stuffed Pumpkin Leaves Rolls with the Sauce


The Recipe

Stuffed Pumpkin Leaves Rolls

Ingredients:
Young leaves, blanched and dry





Filling:
1 onion, chopped
1garlic, chopped
1 tablespoon oil
Salt to taste
1/3 cup glutinous rice
1/3 cup water
1 cup cooked grated pumpkin

For Braising: 2 cups light coconut milk, chilli and salt.


Method

Sauté the onion, garlic with the oil, until fragrant
Add in the rice and the water, cook to a boil until water is absorbed.
Take off the heat, add in the cooked grated pumpkin, mix together, and cool aside.
To assemble:







Place five or more layers of pumpkin leaves; put a tablespoon of the filling in it
Start from the side close to you, fold it over to Cover the mixture, fold the two sides, then roll it over to enclose the filling.  Secured with bamboo pins
To braise:
Place the rolls on a heavy-based pot, add in 2 cups light Coconut milk and spices.  Cook for 5 minutes uncovered to simmer
Braise over low heat for 22 minutes or more.
When it is cooked, stir the coconut sauce to
make it smoother and creamier.
To serve: sliced, place on a plate add some of the sauce around it.

The pumpkin plant in my backyard is staying until two of the pumpkins are harvested.  More stuffed pumpkin leaves are cooked, hopefully.  Such simple food and yet so delicious and nutritious too.

It is less than half of the pumpkin used, five dishes are cooked.  There will be more pumpkin dishes coming, but it's enough for now.  Pumpkin is a versatile vegetable, what you need is creative imagination.
