Clear Soup

Light and Clear Soup

Hot soup for all seasons, this soup is delightful for a warm and cold day.  The broth is the key to the dish.  What you need is a good stock with the right herb and spices.  Chicken stock, beef stock or vegetable stock for vegetarian about one litre, and the spices are ginger, garlic, turmeric, white pepper and lemongrass, you need a lime to garnish.

Egg Rolls in Clear Soup




The Broth for The Soup

1 litre of meat stock or vegetable stock
1/2 teaspoon salt, 1/4 teaspoon white pepper
1 teaspoon raw sugar
Herb and Spices
1 small piece of ginger
1 garlic
lemongrass - 1/2 stem
1/2 teaspoon turmeric powder
1 tablespoon vegetable oil

Method
In a deep pot, fry the garlic, ginger and lemongrass in oil until fragrant
Add in the turmeric, stir then add a cup of hot water, bring to boil
Add in the salt, sugar, white pepper and the stock, bring to simmer
Cover the pot, keep on cooking over very low heat for 7-10 minutes
Taste the seasoning, you may add a little salt if you wish
Transfer the broth onto a serving bowl
The broth is ready to serve for the soup

The Preparation

before adding the one little of the stock


Serving
The egg rolls and garnishes - on the white plate.
Put the egg rolls, carrots, celery and spinach on the bowl,
then ladle the broth over to serve, add the lime aside





Instead of egg rolls, you could have chicken, beef and other garnishes, for vegetarian you could have tofu instead of the eggs or meat.

It is very healthy, light and refreshing to serve during a hot day, but also it can warm you up on cold days.  Have fun, make the broth, and it is good refrigerated for a few days.
