Lemongrass (Continued)


Today's cooking uses lemongrass.  The lemongrass that I use is young lemongrass from my potted herbs.  I found using young lemongrass is as good if anything the flavour is more subtle and easy to chop.  Bruising the lemongrass is essential to get a better taste in cooking and in making herbal tea.

There are questions about lemongrass, is lemongrass tea safe for pregnancy? We all have to be careful about drinking any herbal tea,  I believe herbs contain certain drugs,  so if allergy and pains occurred after taking herbs, you might have to seek professional advice.  To understand more about the safety of taking lemongrass tea, please go to this link:

Lemongrass is used for cooking in Java and in South East Asia.  It gives a specific fragrance that makes the cooking more appetising.  This dish is my own way of cooking chicken fillet with the herb.  It is easy, fast food and delicious.

Ayam Nyemek Bumbu Sereh
(Lemongrass Chicken Coated in Coconut Sauce).
Ingredients:
250 g chicken thigh fillets, chopped
1 tablespoon oil
100 ml of coconut cream or milk
1 fresh lemongrass, bruised
1 small onion, sliced thinly
1 clove garlic, sliced thinly
1 juice of a lime
1 teaspoon sugar and salt
Dried fried shallots
Method
Pan fry the onion, garlic, lemongrass until fragrant
Add in the chicken, stir and toss around.
Add in the lime juice, salt and sugar.
Cook gently for about 5 minutes until the chicken is cooked
At this stage, I cook with the lid on.
Add in the coconut milk, bring to gentle simmer

Add in the fried shallot, cook for 3-4 minutes,
 until the coconut sauce thickens and coating the chicken.
Creamy and fragrant, chicken with lemongrass is ready to serve
Serve hot with steamed white rice.

The delicious chicken dish, this cooking is served for two, if you wish to cook for six people, obviously you could remember that adjustments have to be made.
Serve with white steamed rice or yellow rice to make more colour on your plate.  I am thinking of a friend who lives in Gouda the Netherlands right now, for you Magda, the dish is served with rice and garnished with krupuk udang ( prawns crackers),  now you could enjoy it better.
I never forget the beautiful dishes that you cooked for us five years ago when we visited you in Gouda, it was a delightful and delicious lunch indeed.

My lemongrass chicken, the cooking is suitable for anyone, busy girls, busy mothers and dads or even working bachelors.  The total preparations and cooking only take you less than twenty-five minutes.  You shall enjoy your home cooking, hot and fresh from your own kitchen.  Have fun and happy cooking.

Fresh lemongrass from the market, ready for deep freezing.  Keep in a freezer bag, it keeps for a few months.
