Baking With Herbs

Herbs are essential in cooking, dried herbs are as good as fresh herbs but use them sparingly.   It is time to do the dish using the herbs.  Previously I posted a recipe about herb bush damper.  I have cooked it based on that recipe, but I baked it at home.

Date and Sweet Potato Log, with bay leaves, is another delicious treat for a family.  Serve for morning or afternoon tea.

Herb Damper-Susy's Recipe



BAKING  THE   HERB  DAMPER


Dried Thyme and mint are used for the herb damper, you can add any herbs that you like. 


Herb Damper- Susy's Recipe

Ingredients
2 cups self-raising flour
62g softened butter (a quarter of small block-standard Australian Butter)
1/2 of lime juice, mix with a cup of water
a pinch of salt
2 teaspoons mixed dried herbs

Method
Place the flour in a bowl, add in the salt dried herbs, mix together

Rub the flour mixture with the butter thoroughly

Add in the water and lime juice, mix lightly to make a soft dough

Knead quickly, shape into a large ball, press it down to make a round shape with 2 cm thickness,
slash the top before baking
In the Bush: bake in ay hot place until the damper is cooked
At home (Bake in a Hot oven at 200 degrees for 18 to 22 minutes. Until the damper is golden brown)
To serve: serve hot/warm and buttered

The baking has done,  it turned out beautifully.  

On a beautiful day, bake the damper, pack the picnic back and enjoy or simply have it in the backyard.
