Summer Soups

Clear Soup With Dumplings

No, it is not cold soup, but it is warm or even hot soup which is served with prawn and meat dumplings.  A very light soup and very delicious dumplings that enhance the taste of the colourful vegetables-the stem of the Rainbow Swiss chard.  In fact, I love to serve this soup for pre-dinner at about four o'clock in the afternoon.  It is an appetiser in a way because when you taste this soup, you do want more: what is next?

The Recipe-Summer Soup

Clear Soup With Dumplings
Swiss chard stem, chopped into small pieces
1fresh shallots
1 tablespoon chopped chives and lovage
8 cups of light stock
cooked Swiss chard
meat filling on wonton
Prawn and Pork Dumplings
16 peeled prawns, chopped
200 g minced pork
1 egg
Salt and white pepper
Method:
Put the light stock in a pot, heat up over hot stove to boil
When it is boiling add in the chopped shallot/stem of Swiss chard
Cook over low heat, until it is tender

The dumplings
Using wonton wrap, you can get them from the shop (supermarket or Chinese grocery)
Put the prawns, mince pork in a food processor, process this meat into a smooth paste
Add in the egg, salt and pepper, process again until the mixture is very soft and sticky
Make the paste into round balls the size as big as walnuts
Place each ball on a wonton. gather the edges inward to enclose the meat
Boil light stock, add in the wontons and cook them for 5 minutes
Fish them out, keep them in a container
To serve
Heat up the soup /broth add in the dumplings
Cook for a few minutes until the dumpling is hot enough
Reheat the Swiss chard until it is hot
Put two dumplings in a bowl, ladle the soup, and garnish with the Swiss chard /chopped lovage
This brings back my memories, I saw the street hawkers, sell this soup and they were busy around four o'clock, I remember vividly.
