Cold Pasta

Pasta Salad With Olives

Cold pasta, which is pasta in room temperature, is served as a mixed salad.  I boil my homemade egg pasta, and I have it as a pasta salad with olives. The olives are my homemade preserved.  I noticed now that the olives changed into a darker colour after a few days in the marinade.



Recipe
2 cups cooked pasta
1/2 cup kalamata olives, seeded
1 cup cooked spinach
6 asparagus, blanched
2 tablespoons Parmesan cheese
30 g white anchovies

The Dressing
2 tablespoons olive oil
1/4 teaspoon salt and pepper
(mix those ingredients thoroughly)

Place the pasta and the rest of the ingredients on a serving bowl, add in the dressing (just before serving), toss them together gently.  Serve at once.



Cooking With Olives

Seed the olives
Stuff each olive with 1 white anchovy 



The batter
1 cup self-rising flour
1/2 cup water
1 egg
1 tablespoon Parmesan cheese
salt to taste
In a bowl, mix all ingredients together to make a thick but smooth batter.
Dip in each of the stuffed olives in the batter then fry in hot oil until brown
Serve as a part of an antipasto, or you can enjoy going with a drink


Another olive mixed that is enjoyable is marinade olives with herbs and spices served with anchovies.

You can use any pasta for this salad, bought dry penne or fresh one, I would add in some cooked green beans, (omit the olives), and add in cooked crab meat if you feel to have a treat for a salad.

Summer is the best time to have the cold pasta salad, it is light but substantial food for lunch or dinner.
