Bananas

Banana  and  Apricot Pie

At the moment bananas are readily available here in Australia, and at a lower price.   It is a very versatile fruit, and excellent food for 'a pick you up'.  You can eat it fresh, sliced and added to cereal for breakfast,  you can make a banana smoothie, bake for cakes and pies.   And of course, it makes delicious banana fritters.


Banana And Apricot Pie

I had very ripe bananas the other day, I decided to make banana and apricot pie.  It is my own style, so you may not be able to get it in a shop. The pie was delicious.



*Boil the dried apricot first, before you make the pastry.  It does take time to cook the apricot.  Boil at least for half an hour then soak them in syrup.

Recipe for the banana and apricot pie.
Recipe:
The pastry
500 g plain flour
250 g unsalted butter
Freshly Baked Banana and Apricot Pie
1 egg
2 tablespoons water
1 tablespoon sour cream
1 tablespoon pure icing sugar
You could process it in a food processor (if you wish)
Method
Rub the butter to flour thoroughly
Place flour mixture on a working bench, make a hole in the middle
Put the egg, sour cream and the water in the middle of that flour
Mix them together, and knead lightly to make a soft dough, rest for 25 minutes
The filling
*16 sizeable dried apricot, 1-star anise, boil for a half hour, then add sugar to sweeten
2 bananas (very ripe), each sliced in halves
2 tablespoons almond meal
The pie
Roll the dough thinly about 1/4 cm thickness, divide it into two pieces
Shape the dough into rectangular, sprinkle a tablespoon almond meal
Place 2 halves banana on it, then add 8 apricots on top of the banana and sprinkle almond meal over
Cover the banana and apricot with two sides of the pastry over. 
Place the pie on a baking tray seam side down, cut Crisscrossed on the top
Bake in a hot oven for 33-35 minutes
To serve: Slice into six, dust with icing sugar on top

The Baked Pie


Banana and apricot go very well, excellent flavour combination.  The pie freezes well. Now fresh bananas are plentiful in the market or supermarket, it is a good idea to make the pies and keep some away for other days.
