Starters (Continued)


Welcome back to My Kitchen Table, I think everyone is keen and wants to know what is the golden bundle. It is fresh prawns mixed with prawns mousse wrapped in delicate egg pastry, shaped like a bundle then poached in stock. Served with mango sauce.

I serve one per person, but two bundles a serve are alright.  Beautiful prawns dish for Summer Feast. Perfect and Delicious.

Golden Bundle with Mango Sauce


The Recipe

Golden Bundles

Ingredients:
The pastry
1 cup-full, plain flour
3 egg yolk Or (1egg plus 1 egg yolk-the pastry has lighter texture)
1 tablespoon oil
2 tablespoons water
a little salt
Mix all ingredients together to make a soft dough
Knead lightly for a few minutes, keep aside to rest
The filling
375 g fresh prawns
chives  chopped
1 cup fish mousse:
2/3 cup prawns
1 egg
1 tablespoon cream
salt
Place the mousse ingredients in a blender, blend them to make a smooth paste
Add the mousse to the fresh peeled prawns, the chives,  mix together.   Refrigerate until is needed.
The sauce-mango sauce
1 very ripe mango, peel and puree
1/2 cup of fish stock or water
1 teaspoon cornflour
1 tablespoon vegetable oil
1 tablespoon white vinegar or lime juice
1 chilli, 1 clove garlic, crushed
1/2 teaspoon salt
1 teaspoon sugar
Place all ingredients in a blender, work it to make a smooth runny mixture
Transfer in a pot, cook over medium heat, bring it to simmer and cook for 2 minutes.
Keep the sauce in a bowl, refrigerate if not needed.
To make the bundles
Roll the pastry thinly, cut them in round shape. Keep aside
Place a tablespoon filling on the middle of the round pastry, brush with egg white around the edges
Gather the edges of the pastry inward to in close the filling, then pinch tightly to hold
freeze it at this stage
Do the rest until all pastry rounds, and the filling is used up
Poach the bundles in stock for about 10 minutes (the stock has to cover the bundles)
or fry until golden brown
Serve the poach golden bundles hot or room temperature, with mango sauce.
Serve the fried golden bundle on a bed of salad and the sauce aside.

Delicate and Delicious entree for the feast, with beautiful Flavour.

The Pastry
Rest the dough for 30 minutes

Serve the Golden Bundle with The Mango Sauce
