Chocolate Petite Cakes with Chocolate Ganache and Glace Fruits |
Enjoy the petite chocolate with coffee at the end of a meal. Or serve the cake as a part of the afternoon /high tea spread.
The Recipe:
Petite Chocolate Flour Less Cake

Ingredients:
25 g cocoa powder
50 g unsalted butter, melted
1 teaspoon instant coffee
50 mil hot water
65 g almond meal
1 tablespoon self-rising flour
50 g caster sugar
2 eggs- 2x50g, separated
Method:
- Preheat oven to 160°C. Grease mini cups tin liberally with margarine or butter.
- Combine the cocoa powder and the instant coffee.
- Add in hot water, and stir until well combined.
- Add in the melted butter, stir together.
- Add almond meal and the flour, sugar, egg yolks to cocoa mixture, and stir until well combined.
- Use an electric beater to whisk egg whites in a clean, dry bowl until soft peaks form.
- Use a metal spoon to fold a spoonful of egg whites into cocoa mixture until combined.
- Gently fold in remaining egg whites until just combined.
- Spoon mixture into the prepared tin. Bake in preheated oven for 13 minutes or until a skewer inserted into the centre of the cake comes out clean. Remove from oven.
- Turn cake onto a wire rack. Set aside for a further 10 minutes or until cooled to room temperature
- These cake are ready to decorate.
Note: The cake uses a little flour, as the name says it, it is less flour add/replace almond meal instead.
