Petite Cakes

Flourless Petite Cakes

This is a treat for everyone.  It is a flourless cake using almond meal and a little cake flour. A little bit dense but moist chocolate cake, decorated with any topping you like; chocolate ganache or glace fruits.

Enjoy the petite chocolate with coffee at the end of a meal.  Or serve the cake as a part of the afternoon /high tea spread.
The Recipe:

Petite Chocolate Flour Less Cake

Ingredients:
25 g cocoa powder
50 g unsalted butter, melted
1 teaspoon instant coffee
50 mil hot water
65 g almond meal
1 tablespoon self-rising flour
50 g caster sugar
2 eggs- 2x50g, separated

Method:
  1. Preheat oven to 160°C. Grease mini cups tin liberally with margarine or butter. 
  2. Combine the cocoa powder and the instant coffee.
  3. Add in hot water, and stir until well combined. 
  4. Add in the melted butter, stir together.
  5. Add almond meal and the flour, sugar, egg yolks to cocoa mixture, and stir until well combined.
  6. Use an electric beater to whisk egg whites in a clean, dry bowl until soft peaks form.
  7. Use a metal spoon to fold a spoonful of egg whites into cocoa mixture until combined.
  8. Gently fold in remaining egg whites until just combined.  
  9. Spoon mixture into the prepared tin.  Bake in preheated oven for 13 minutes or until a skewer inserted into the centre of the cake comes out clean. Remove from oven. 
  10. Turn cake onto a wire rack.  Set aside for a further 10 minutes or until cooled to room temperature
  11. These cake are ready to decorate.

Note: The cake uses a little flour, as the name says it, it is less flour add/replace almond meal instead.
