Starters

The Festive Feast - Entree  Dishes

Celebrations, parties and feasts are the occasions that my late mother enjoyed to have, and she was good at.  Today I spent a little time in the garden, the weather was good.  My blue moon rose the favourite colour of my mother is in blooms.  I could not help it to take the snapshot and to show it off.  It has been there for a few years, but this year it takes off beautifully.

Every time I prepare exceptional cooking, I always think of my mother.
I am very eager to prepare the entree dishes for the festive feasts as promised.  The recipes are ready for everyone. The prawn's dishes are very simple. The golden bundles you could organise a few days before the party, and keep them in a freezer.  Prawns on tomato rice have to be cooked on the day.  These are my own recipes,  I hope you all like them.  The ingredients are readily available here in Australia.

Prawns    For   Entree
Prawns  On  Tomato  Rice


A delicate flavour of prawns cooked in tomato sauce with kaffir lime leaves.  It needs extra lemon juice to bring out the taste.  Squeeze fresh lemon juice on the prawns before serving.

The Recipe


Prawns on Tomato Rice
250 g shelled fresh prawns
2 tablespoons oil
4 kaffir lime leaves, shredded finely
Tomato sauce:
1 cup chopped sweet red tomato
1 tablespoon rich tomato paste
1/2 cup water
1 garlic, salt to taste
2 tablespoons vegetable oil
Saute the fresh tomato with oil until soft, add in the garlic, cook for a few minutes
Add in the tomato paste, mix together and continue cooking over low heat
Stir in the water add in the salt and cook for ten minutes on low heat until the sauce is thickened
To prepare the prawns
In a saucepan, saute the prawns in hot oil until the prawns turned red
Add in the tomato sauce, bring to a gentle simmer and cook for 3-5 minutes.
Add in the shredded kaffir lime leaves, take the saucepan off the heat.  Transfer in a bowl and cover.
Tomato Rice
1 cup long grain rice
1 cup tomato sauce (recipe above) make another batch!
11/2 cups water
To cook the rice
Place the rice in a heavy based pot
Add in the tomato sauce and the water, to boil until the water is absorbed-(uncovered)
Cover the pan, reduce the heat into low and cook for 8 minutes.
Stir and fluff the rice, cover the pot, keep aside until you are ready to serve.

To assemble -To serve
Use a ramekin, wet it with water,  put a tablespoon of rice, press the rice firmly then turn it over. Now you have a lovely little round shape of rice.
Place about 5 prawns on top and garnish with fresh shredded kaffir lime leaves and drizzle with a little oil.   Add fresh lemon juice on top.  Repeat the process until all finished (makes 6 ).

Garnish with fresh shredded lettuce, tomato and kiwi fruit or other fruit that you like, dressed with lemon juice.



Now you have it, prawns on tomato rice.  I would serve one per person.    Serve warm or room temperature.
